Maria Montessori was an Italian Doctor who began her carrer working with children with special needs. She lated developed what we now call the Montessori School for children. She is a fascinating woman

Montessori Schools believe that children should be able to decide what they want to learn, and at what rate they learn. The teacher is basically there to insure that the kids aren't misbehaving, and to keep a rather light structure on the learning environment. They also are there to encourage the students in whatever it is that they are focusing on, whether it be art, music, or whatever-- while providing more specific information on the subject.

I don't know the exact theories, but I know generally what they stand for (my mom used to work in one). They are very flexible environments where kids are encouraged to learn about what they want to learn about. Kids are not disciplined as much or held to regimented schedules.
