First, who is "the man". The man is any authority figure usually one that abuses their power. In America "the man" is usually a white man.
So, to stick it to the man is to get revenge on the powerful rich authority figure, for holding the poorer people down.

"the man" is every corporate leader who has entire control of your being. To stick it to him, is to show that you will not be controlled and that you actually have a will of your own. Some people steal office supplies, some even break laws. Whatever the case, you are showing that you are your own man and not just a pawn in someone else's game.
