CHOCOLATE POTATO FUDGE
2 med. potatoes, peeled & cut up
1-2 tbsp. milk
1 (16 oz.) pkg. semi-sweet chocolate chips
1 c. peanut butter (either chunky or creamy)
1 tsp. vanilla
3-4 c. powdered sugar
1/2 c. chopped peanuts
Cook potatoes, covered in boiled, salted water for 25 minutes. Drain water off and mash potatoes with milk to make fluffy. Set aside.
In heavy saucepan, heat chocolate chips over low heat until melted, stirring constantly. Remove from heat and stir in potatoes, peanut butter and vanilla. Stir in 3 cups of powdered sugar, working in with your hands if necessary. (You may need to add more powdered sugar if the mixture is not thick enough.) Stir in half the peanuts. Put the mixture into a greased 9 x 9 inch baking pan. Press down evenly. Sprinkle with remaining peanuts, pressing lightly into fudge. Cover and chill until firm.

3 sq. unsweetened chocolate
3 tbsp. butter
1/3 c. mashed potato
1/8 tsp. salt
1 tsp. vanilla
1 lb. sifted powdered sugar
Melt chocolate and butter over water. Add potatoes, salt and vanilla. Mix well. Blend in sugar and mix thoroughly. Knead until smooth and press into 8 inch buttered pan. Cool and cut. Makes 1 1/4 pounds fudge.

POTATO FUDGE CAKE
1 c. butter
2 c. sugar
4 eggs, separated
1 c. grated uncooked potato
2 oz. unsweetened chocolate
1/2 tsp. allspice
1/2 tsp. ground cloves
1/2 tsp. cinnamon
1/2 tsp. salt
2 1/2 tsp. baking powder
2 1/4 c. flour
1/2 c. chopped nuts
1/2 c. milk
Grated rind of 1 lemon
Cream the butter well and add the sugar gradually until light and fluffy. Beat in the egg yolks, one at a time, beating well after each addition, then beat in the potato. Melt the chocolate over hot water and sift the allspice, cloves, cinnamon, salt and baking powder with the flour.
Dust the nuts with a small amount of the flour mixture. Add the milk alternately with the flour mixture to the egg mixture, then beat in the chopped nuts and lemon rind. Beat the egg whites until stiff peaks form, then fold into the batter. Pour into 3 greased and floured layer cake pans.
Bake in a preheated 325 degree oven for 45 minutes or until cake tests done.

Potato Fudge
3 squares (3 oz) unsweetened chocolate

1/2 cup unseasoned, mashed potatoes (at room temp)
1 teaspoon vanilla
1/4 teaspoon salt
3-3/4 cups (1 pound) powdered sugar
2 teaspoons milk or soy milk
Almonds, finely chopped
Melt chocolate and butter together in a saucepan over low heat, stirring occasionally. Remove from heat and stir in mashed potatoes, vanilla, and salt. Sift powdered sugar into large bowl. Add chocolate mixture and mix well. Mixture will be slightly dry and crumbly. If necessary, add milk to make a dough that can be kneaded. Turn out on a board and knead until smooth.
Dust board with powdered sugar if necessary. Shape mixture into two rolls, about one inch in diameter. Roll in chopped almonds. Wrap in wax paper and chill. Cut into 1/2 inch thick slices. Makes 4 dozen.

Potato Candy! There are loads of recipes out on the web for this stuff. It's REALLY easy to make.
Here's a recipe from cooks.com:
1/2 cooked potato or a lg. spoonful of leftover mashed potatoes
Peanut butter
Powdered sugar
Mash potato with fork. Add powdered sugar until the mixture can be formed into a ball. Roll it out with a rolling pin (rolling it out on wax paper may ease the stickiness). Spread with a thick layer of your favorite peanut butter and roll into a log (like a jelly roll). Refrigerate. When set, cut into slices and enjoy!
There are loads of variations...try adding a little vanilla extract to the potato mixture, for example. Good stuff!

Mashed Potato Fudge
1/2 cup unseasoned, well-mashed cooked potato (about 1 medium potato)
3 cups powdered sugar
1 cup flaked or shredded coconut
1 teaspoon vanilla extract
2 ounces semisweet chocolate
While the potato is hot, beat in the sugar and coconut; then the vanilla.
Press into a lightly greased 8-inch square pan. Melt chocolate and pour over top. Chill and cut into squares. Keeps indefinitely in an airtight container in the refrigerator.
Makes 64 1-inch pieces.
VARIATIONS WITHOUT CHOCOLATE:
PEANUT BUTTER: Roll potato mixture on wax paper sprinkled with powdered sugar until very thin. Spread with creamy peanut butter and then roll into a long log. Roll in a little more powdered sugar and refrigerate. Slice to serve.
TENNESSEE CHRISTMAS MINTS:
Omit vanilla and substitute a few drops of oil of peppermint. Tint fondant pink with food coloring. Flatten balls to approximately 1/2-inch thickness.
COFFEE MOCHA LOGS:
Add 2 teaspoons instant coffee powder to recipe while kneading mixture. Shape into finger rolls 1/2-by-2 inches. Roll in chocolate sprinkles.
