We like ham and chicken best. We like pasta and cheese. Peas, corn and green beans are our favorite veggies and we really dislike onions. Any easy recipes out there?

MEXICAN CHICKEN SALAD

1/2 lb chicken breasts, cooked (ie: boil or grilled), boned and skin removed, and chilled. Or 2 boneless breasts.
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, optional
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste


Pull apart the chicken breast and shred or dice. Put aside.
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold, topped with the chicken or, mix the chicken into the salad before serving.

The kids may need a little with this one, but they are delicious! 1 stick of butter 2 cups sugar 4 tbsp cocoa 1/2 cup evaporated milk 1/4 tsp salt 1 tsp vanilla 1/2 cup peanut butter 3 cups quick oats Mix first 5 ingredients together and bring to a boil, stirring constantly. Cook an additional 1 1/2 minutes. Take off fire, then add last 3 ingredients. Drop on wax paper and let cool.

You could try a pasta primavera. Its fresh and tasty and above all easy to make. Go to www.mealsmatter.com and you can put in the ingrediants you like and it searches for a gabillion recipes. Pretty Great, and the recipes have ratings. All I've tried has been great.

Grill the meat, whether it's chicken or something else accompany it with pasta in a creamy garlic sauce (sauteed garlic in butter and mix with a little heavy cream). For dessert, get some tortillas, brush with olive oil and grill these too. When there done brush again with a little more oil and sprinkle with cinnamon and sugar, cut into wedges and serve with ice cream.

There is a delicious tea that is made without sugar that is very easy to make.

Buy some raspberry tea, and follow those directions accordingly. Add sliced peaches, some blueberries and some raspberries, chill, and you are good to go.
