Make bubble and squeak.

This is old potatoes left over from Sunday Roast etc that are sauteed with seasoning and either olive oil or whatever fat you have. Add greens such as cabbage or spinach to it and sautee/fry till the pototoes start to brown and crispen on the edges. There you have bubble and squeak.

Goes nicely with cold ham and picallilli.

I bake my potatoes until they are done, then cut in half length- way, scoop out the potato leaving a bit of the potato in the skin. Brush a mixture of butter and garlic salt inside the potato skin, then put the potato skins back into the oven to bake an additional 10 minutes, until they are slightly crispy. Meanwhile, mash the scooped out insides with sour cream, evaporated milk, sharp cheddar cheese, salt and pepper. After the potato skins are crispy and hot, stuff the above mixture back into the skins, brush them with some more garlic and butter, and bake 10 minutes more in 400 degree oven.

I've only seen this done once, so I'm trying to repeat from memory.

We baked the potatoes, as you normally would. Then when they're almost done, you take them out and cut them in half. Scrape most of the potato out of the skin. Put all the potato in a bowl, and mix whatever you like in with it. Mash it it and mix around really good. Then spoon the potato filling into the empty skins, and put them back into the oven for a while. We topped them with cheese and chives, I think.

Sounds good, eh? They take quite a bit of work, as I recall.

bake it once then take them out remove the potato from the skins then mash them with some ranch dressing and a little bit of cheese then put the mashed up potatos back in the skins put a little cheese on top then bake them again.

bake them twice....I make the best twice baked potatoes

everyone at work always wants me to bring those for our pot lucks......

cook once take out scrape out insides flavour with spices and butter put back in shell cook again........ viola!
