My grandma uses all rhubarb for the fruit, but uses raspberry Jello with it. It is HEAVEN.

STRAWBERRY-RHUBARB FREEZER JAM
5 cups rhubarb (chopped)
5 cups sugar
16 oz can crushed pineapple
1 large box or 2 small boxes strawberry Jello
Cook first 3 ingredients until rhubarb is tender. Remove from heat and cool for 10 minutes. Add Jello, stirring until dissolved. Ladle into scalded freezer jars or plastic containers; cool completely before freezing
RHUBARB - JELLO SAUCE
5-6 cups rhubarb (chopped)
1 1/2 cups sugar
water
1 small package raspberry jello (can be strawberry)
Cook the rhubarb. Cover with water when you see it is coming through the sliced rhubarb. Add sugar to disolve. Stir in jello. Sauce will thicken.

10 cups rhubarb
3 - 6 cups saguar (depending on how sweet you want it)
1 package strawberry jello (small size)
Cut rhubarb in half inch slices.
Stir rhubarb and sugar together. (I found 3 cups to be enough.)
Let stand for 2 to 3 hours. The rhubarb juices will be drawn from the plant to make a liquid for cooking in.
Bring to a full boil, and boil for 5 minutes.
Add jello, stir well.
Pour into clean hot jars, put on seals, rings and tighten down.
Process for 10 minutes in boiling water bath.

5 cups finely cut rhubarb
1 cup water
5 cups granulated sugar
1 (21 oz) can of pie filling (cherry and strawberry are good)
1 (6 oz) box jello (cherry jello for cherry pie filling, strawberry for strawberry, etc..)
Cook rhubarb in water until tender. Add sugar, stirring constantly. Cook a few minutes. Add pie filling and cook 10 minutes, breaking up the fruit from the pie filling a bit. Remove from heat. Add Jell-O; stir until dissolved. Pour into jars and seal or store in refrigerator or freezer
