I believe that Canola Oil is the highest recommended but a good Light Extra Virgin Olive Oil is good.

EVOO..extra virgin olive oil... but not recomended for cooking at very high temps for long periods of time. For frying use canola or all vegtable oil.

the oil I use to be "invisible" for flavor is either vegetable oil or canola oil.
From what I understand olive oil is the best for you though, but it adds flavor to whatever dish you are preparing.
