MEATBALL SPECIAL
1 POUND LEAN GROUND BEEF
1/2 CUP BREAD CRUMBS
1 EGG
1 CUP CANNED TOMATO SAUCE- DIVIDED (1/4 & 3/4)
1 TSP SALT
1/8 TSP PEPPER
1/8 TSP GROUND ALLSPICE
1 ONION - CHOPPED
2 TB OIL
3 CUPS WATER
1 PACKAGE ONION SOUP MIX
1 1/2 CUPS CARROTS - SLICED
10 OZ. FROZEN PACKAGE PEAS
1/2 CUP GREEN PEPPER - CHOPPED
3 POTATOES - CUBED
COMBINE IN A BOWL; MEAT, CRUMBS, EGG,
1/4 CUP TOMATO SAUCE, SALT, PEPPER, ALLSPICE AND ONION.
MIX WELL AND FORM INTO 12 BALLS.
IN A SKILLET HEAT OIL AND ADD MEATBALLS. BROWN ON ALL SIDES AND DRAIN.
IN LARGE POT ADD MEATBALLS, WATER, 3/4 CUP TOMATO SAUCE, ONION SOUP MIX, CARROTS, PEAS, GREEN PEPPER, POTATOES. BRING TO A BOIL AND COOK OVER LOW HEAT FOR 30 MINUTES OR UNTIL VEGETABLES ARE TENDER.

I've never had soup with cream in it. Buy a new recipe book!. Take advantage of ingredients you have in the fridge/store cupboard. The basic ingredient of soup is water!! - To this you can add any vegetables in season and/or pasta/noodles and/or rice/lentils and herbs/spices. Medium currey Madras powder is quite exciting!!
I personally would think an onion or two is essential. Maybe garlic, depending if you were going out dating afterwards or not (grin). Pepper.
You can make a soup thicker by adding potatoes, sweeter by adding sweet potatoes. Even look at your tins - i.e. tomatoes, sweetcorn..
I never use salt in cooking, but people can add it if they want it.
If you add rice or lentils, or pulses it can almost be a meal!
Don't bother pulverising it or microwaving it, as will upset the nutrients balance, but use a potato masher to mash all ingredients together when cooked (as long as the slowest ingredient, rice, or vegetable. Not necessary to overcook.
You could even fry some cubes of wholemeal bread in Olive oil (slowly, never overheat olive oil) and you have croutons to sprinkle on top.
Have fun..... and taste as you go along (don't put the spoon back in the soup though without washing it - grin!!.

You can do loads! Even the ones you find with cream in, just leave it out!! you could do any soups: brocolli, asparagus, watercress, spinach, red pepper and sweet potato (thats my fav!). Just fry some red onion, add the main ingredient (brocolli/red pepper etc) and fry for a few mins, then add the bulk (usually potato/sweet potato) and some stock. Just allow it to bubble away and reduce down until the potato is cooked (about 20mins), then whizz it up in a food processor. Put it back in the pan and if it is too thick then add some more stock, if it is too thin then add cornflour. (make a paste with the cornflour first, one part cornflour, to two parts liquid - usually a table spoon of cornflour to 2 tablespoons of water) Don't forget the black pepper, it just finishes it off!
Just have a play around, don't be worried about having all the measurements.

Try searching for minestrone, that doesn't usually have cream. Alternatively, get some Miso and add hot water, spring onions, noodles, spinach, whatever other vegetable you feel like: Japanese noodle soup. Leave the vegetables slightly crunchy, but make sure the noodles are soft. You can also add some chicken or tofu.

Carrot and Coriander soup is one of the best:
Boil up a couple of pounds of carrots and a potato in some chicken or vegetable stock (I'm a veggie so I use vegetable, but chicken is nicer), when it's all soft blend it together and add fresh coriander, salt and pepper to taste. Absolutely lush. Apologies for no exact measurements, but I don't think you really need them.

Easy onion soup
Get 1 whole onion, peel and thinly sliced
1 can of beef broth
In a pot, add 2 tsp oil. Add the onion and sautee for 3 minutes or until translucent. Add the 1 can of beef broth + 1 can of water. Simmer for 10-15 minutes.
Normally you serve it with mozarrella or provolone cheese but since she's allergic, just serve with a piece of toasted sourdough bread.

Put in medium saucepan: 1/2 cup each of chopped potatoes, chopped celery, chopped carrots and 1/2 cup water or chicken broth. Bring to a boil, lower heat, cover and cook 10 minutes. Add one can of creamed corn, and 1/2 cup shredded cheese and simmer 5 more minutes. Salt and pepper to taste or a dash of Worchestershire, or Tabasco and you have an excellent veggie chowder.

Gazpacho
3 c. fresh tomatoes, peeled, seeded and chopped
1/2 c. onion, chopped
1/2 c. chopped green pepper
1 cucumber, peeled and seeded
3 Tbsp. fresh minced parsley
2 Tbsp. snipped fresh chives
2 c. tomato juice
1/4 tsp. cayenne pepper
1/3 c. red wine vinegar
1/4 c. olive oil
salt to taste
Throw it all in the blender and process until smooth. Refrigerate, covered at least 6 hours. Serve cold. Great summer soup

This one is wicked easy. Get some chicken, I prefer boneless skinless, put it in a crock pot with some water ,carrots, celery, and onion...cook for a few hours, then add some rice, peas and chicken bouillion. Cook a while longer then Add Salt and pepper and there you go. You can add as much or as little ingredients that you want. Broccoli is really good in it too. If you add a little sage...it gives it a great flavor!!
