That is simple... CHILI!! I like to have mexican corn bread with a bowl of spicy chili con carne. You can't beat it.

Also, another great way to have mexican corn bread is with some jack cheese melted on top. If you try that one melt the cheese in your oven on broil. This is the best!

Midnight, the best mexican cornbread I ever had was the recipe on the back of Martha White's Buttermilk Corn Meal bag. Be sure to use a greased cast iron skillet preheated in oven, and add chopped jalapenos & drained corn to your recipe. When mine's done, I take out of oven, place skillet on trivet, and allow several pats of butter to melt on top...spread around a bit... oh my.
