boneless chicken breasts, brown in frying pan. One can Cream of Chicken soup pour over breasts, l/2 cup whole milk. Paprika and minced onions stirred in. Serve over minute rice and make a salad.

Chicken, Potatoes and Veggies
Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in bread crumbs and bake 30 minutes at 325 degrees.

If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.

While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.

When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.

Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer

Beef pasta dish for 4:

1 tablespoon oil
1 clove garlic chopped
2 dried chillies (large pref) chopped - remove seeds if heat not wanted
1lb minced beef
1 wine glass of wine or dry vermouth
1 teaspoon salt
4 tablespoons of soured cream or creme fraiche
1 packet of pasta shapes e.g. farfalle
Salt

Method . . .

* Boil up the pasta in a pan following packet instructions. Add salt as desired.

* Heat oil on medium heat in a wide pan, when hot add the garlic and chillies. Cook for 1 minute, stirring occassionally

* Add the meat and brown, breaking up any lumps. Reduce heat to medium/low, continue cooking stirring occassionally until the meat has browned. Add the teaspoon of salt (or as required). Cook for around 10 mins.

* Add the wine/vermouth and continue cooking until the liquid has evaporated, stirring more frequently towards the end. Reduce heat to lowest setting and cook for 5 mins.

* Add the cream or creme to the meat and stir through.

* When the pasta is ready, drain it and combine the meat mixture with the pasta. Stir through to mix thoroughly and serve.

You can make the dish as mild or as hot as you want by adjusting the amount of chillie.
