How to make flapjacks:
Basically this is a cookie which consists of oats held together by a toffee. They keep well, are satisfying and easy to make.
Ingredients
1 1/2 cups oats
2 tablespoons caster/superfine sugar
1 tablespoon golden syrup
6 tablespoons butter
Method
- Melt the syrup, sugar and butter together in a heavy bottomed pan.
- Remove from heat.
- Stir in the oats and mix well.
- Press the mixture firmly into a shallow, well greased tin and place in the oven at 170 degrees centigrade (see temperature conversions) for about 35 minutes.
- Leave to cool and then cut into generous portions while still warm, being careful not to burn yourself or your mouth!

Grandma's flap jacks
rolled Oates " 2 1/2 cups
flour 1/2 cup
golden syrup 3/4 cup
1/2 cup margarine or butter ( soft)
(optional);
1/2 cupof toasted nuts or dried fruit,
lrg spoonful of honey , cinnamon 1/2 teaspoonful
mix all well together
put onto baking tray (well greased)
Laval out with spoon
pop into medium oven
till golden brown---- approx 1/2 hour
allow to cool in tin
cut into pieces
Enjoy !

ENGLISH FLAPJACKS
5 oz. butter
4 oz. brown sugar
8 oz. rolled oats
Melt sugar and butter; add oats and mix well. Spread into 8 inch square tin. Bake at 350 degrees for 15 minutes. Cut into squares while hot.

OLD FASHIONED [AMERICAN] FLAPJACKS
1 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 egg
1 c. milk
3 tbsp. butter, melted
Sift dry ingredients together into medium bowl. In another bowl, beat egg. Add milk and butter; beat until well blended. Pour into dry ingredients. Beat only until combined. Batter will be lumpy. Meanwhile, heat griddle or heavy skillet. Use about 1/4 cup batter for each flapjack. Cook until bubbles form on surface and edges become dry. Turn; cook 2 minutes longer or until nicely browned. Serve with whipped butter and warm maple syrup.

easy homemade pancake/flapjacks
2c. milk
2eggs
2TBS baking powder
2c. flour
2TBS sugar/sweetner
2TBS oil
Mix thoughly, it will be thin. Spoon into a hot skillet,lightly greased with oil. Cook until the bubbles start to pop, flip, cook for another
minute, remove. Add butter and syrup.
My grandfather used to put a fried egg on top and pour syrup over that also.

A flap Jack is a pancake and any recipe for pancakes will do. They don't have to be made with oatmeal. They can be simple like Aunt Jemima or even sourdough.
