Blend first three ingredients. Simmer until reduced to 2 quarts. Stir in remaining ingredients. Put 1 teaspoon vinegar in bottom of each jar. Fill with salsa and process 30 minutes in a water bath.

This recipe is one of my favorites... I had it the first time at the Hilton in Honolulu and asked for the recipe..which surprised me to say the least....

I jar of Joe T. Garcias Salsa ( you can use any kind, this is just what they suggested)
1 purple onion diced
1 tomatoe diced
3 avacados diced
1 small bottle of Wishbone Italian dressing
1/4 teaspoon of garlic salt

combine all ingredients and let chill for an hour, serve with tortilla chips.

4 fire roasted green chilis (may use anaheims if you prefer)
finely diced- fresh
1/4 cup minced cilantro no stems
1 each red, green, and yellow Bell peppers-seeded, diced
1 cup frozen yellow or white sweet corn, thawed
1 can black beans rinsed
1 tablespoon comino (cumin seed) ground
Salt and fresh ground black pepper to taste
hot sauce to taste (I prefer Cholula brand- good heat but not
extreme, and less vinegary taste than most)
Mix all ingredients in a glass bowl, and refrigerate covered for a minimum of 2 hrs- serve with anything you like salsa on or with.

This salsa is easy to prepare (I use my Cuisinart for most of the chopping) and my friends and family absolutely love it. They always want me to make it when they come over.
4 large ripe tomatoes, cut into thin slices, seeds removed
1/2 purple onion, diced
1 red bell pepper, diced
1 yellow pepper, diced
4 green chiles, diced, seeds removed
4 ears corn boiled, kernals cut off
4 cloves garlic, peeled and diced
2 cans black beans, drained and rinsed
1 12 oz. can tomato sauce
1 6 oz. can tomato paste
Vinegar
Lime juice
Red pepper

Turn oven on to Broil.
Cover a 13x9 inch baking pan with foil and coat the foil with olive oil spray.
Toss first seven ingredients with with olive oil and spread evenly throughout the pan.
Broil for several minutes - just long enough to roast but not char the outside.
Mix roasted vegetables with black beans, tomato sauce, and tomato paste.
Season with vinegar, lime juice, and red pepper to taste.

Serve with tortilla chips, pita bread, or warm crusty sourdough bread.
