indians use oil in cooking because there are a lot of spces go into the dishes and ....the spices should be fried well for the flavour !
also they use oil for their hair ..coconut oil is verry good for your hair!!
try applying coconut oil in your hair ...leave it overnight and then wash your hair in the morning ....if you do this even once a week your hair will become thick and health !!!
its an age old tradition ! also indians use oil for their body and massage well !!!
it gives your skin a lot of life !!! and massaging improves blood circulation !! so oil is not all that bad !! but again indians also tend to overdo the usage of oil !! its just that its been used since ages ..and to stop using it would be verry difficult !

indian food is so oily because they use ghee to cook with its like cooking oil but you can heat it to a higher temperature therefore its better for frying the spices to bring out their full flavour

I NEVER TASTED FOOD FROM THE INDIAN CULTURE THAT WAS GREASY....ACTUALLY THE OPPOSITE...FRESH AND TENDER CHICKEN RICE LENTILS ETC....
