Jell-O consists of four main ingredients: gelatin, water, artificial sweetener, and food coloring. Gelatin gives Jell-O its weird, not-quite-liquid-but-also-not-... structure. Not to gross you out, but gelatin is made up of a kind of a protein called collagen that's found in cow and pig hides, hooves, bones, and connective tissue. To make Jell-O, this stuff is boiled down, chemicals are added to it, and then the collagen is extracted. Humans also have collagen -- it makes your bones, skin, and muscles strong but also kind of elastic. Collagen is the "bend but not break" protein.

i dont eat it because it contains gelatin. in the usa the fda does not make companies disclose the source of their gelatin. so some may be pork, some may be bovine. i do not eat pork, so therefore, i dont eat things that have gelatin in it. there are many items that have gelatin in it, for example, poptarts,cereal,skittles, and yogurt. sometimes you will find it says kosher gelatin. that is a beef derivitive. there are some european jello products available that has beef gelatin in it. for some reason they dont set as well as the jello brand.
