Jalapeno Strips, crisp fried in a zesty batter, served with Chili Con Queso Dip.

INGREDIENTS:
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
2 eggs
1 cup beer
1/2 quart vegetable oil
2 cups sliced jalapeno peppers

DIRECTIONS:
Mix flour, salt, pepper, red chili powder, garlic powder, eggs, and beer together in a bowl.
In a deep fryer, or large pot heat oil to 365 degrees F (180 degrees C).
Dip the sliced jalapenos in the batter. Place battered jalapenos in deep fryer. The jalapenos are fully cooked when they float to the surface of the oil. They should be golden brown and crispy. Enjoy!

"This is a recipe for stuffed jalapenos I had at a baby shower in Texas. I loved them and have made them for every party since. They are always anxiously requested, a HIT AT EVERY PARTY!!!! Use toothpicks to secure the bacon around the stuffed jalapenos. Be sure to use a pan that won't let the bacon drip all over the oven while cooking!"

2 (12 ounce) packages ground sausage
2 (8 ounce) packages cream cheese, softened
30 jalapeno chile peppers
1 pound sliced bacon, cut in half

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
Drain sausage and place in a medium bowl. Mix with the cream cheese.
Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the sausage and cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks.
Arrange wrapped jalapenos in a large, shallow baking dish. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown.

TEXAS STYLE STUFFED JALAPENOS 8 large jalapenos 1 pkg cream cheese 1 cup cheddar cheese dash of garlic powder dash of salt hickory smoked bacon Split jalapenos in half length wise and remove the seeds. Mix Cream Cheese and Cheddar together adding spices. Stuff peppers generously and place in baking dish. Cover peppers with generous slice of bacon. Bake at 450 till bacon is crisp OR CRAB STUFFED JALAPENO FRITTERS 12 lg. jalapenos 4 oz. crabmeat, well drained 1/3 c. minced red onion 1/4 c. minced green bell pepper 1/4 c. mayonnaise 1/2 c. all purpose flour 3/4 c. Mexican beer Corn oil (for deep frying) All purpose flour 1/2 avocado, peeled, diced 1/2 c. mild salsa, drained 1 tbsp. mayonnaise Starting just below stem, cut chilies lengthwise in half, leaving stems attached. Seed chilies. Place chilies in heavy medium saucepan. Cover with cold water and bring to simmer. Drain. Repeat process. Dry chilies. Combine crab, onion, bell peppers and mayonnaise in small bowl. Season with salt and pepper. Fill chili cavities with crab mixture. Press chili halves together to compress filling,. (Can be prepared 4 hours ahead, cover and chill.) Place 1/2 cup flour in bowl. Gradually whisk in beer. Let stand 5 minutes. Heat oil in heavy deep pot to 375 degrees. Whisk batter to smooth. Dredge jalapenos in flour. Holding stem end, dip into batter to coat completely and deep fry in batches until golden brown, about 3 minutes. Transfer jalapeno to paper towels and drain. Combine avocado, salsa and mayonnaise in small bowl. Season to taste. Arrange chilies on platter. Garnish with salsa. OR JALAPENOS STUFFED WITH PEANUT BUTTER Jalapeno peppers Creamy peanut butter Cut whole jalapeno peppers in halves. Remove seeds. Wash with cool water and dry completely with paper towel. Spread creamy peanut butter into jalapenos. Serve with favorite snack cracker. These taste much better than they sound or look. OR STUFFED JALAPENO PEPPERS Fresh jalapeno peppers (18 or 20) 1 box Oven Fry for Pork 1 lb. any pan sausage (room temp.) 1 c. Bisquick 1 (8 oz.) pkg. Monterey Jack cheese (6 or 8 oz.) 2 tbsp. water Clean, slice peppers. Put a small slice or chunk of cheese inside each half of pepper. Then put them back together. Mix together sausage, Bisquick and water. Make a patty and then mold around the pepper and roll pepper into pork fry until it is well coated. Insert a toothpick into each pepper. Place on foil cookie sheet and bake at 350 degrees for about 30 minutes or so. Eat while warm. JM
