yes, I do...I can make any type of sorbet.
Put about a quart of your fruit puree, or other flavoring ingredients into a tall bain marie. Make a simple syrup. Bring the syrup to a boil to dissolve the sugar completely and then remove it from the heat.
Put a raw egg (in the shell) into the fruit puree and add your simple syrup until the egg floats. What your are looking for is the end of the egg floating above the surface so that when you look at the circle of the egg floating above water, it is the size of a nickel. If the egg sinks, add more syrup. If the egg is floting too high, add water. Once you get the "nickel" size, remove the egg, chill the mixture thouroughly, then put it in your basic ice cream maker to freeze. I just own a Cuisineart 1 1/2 quart home ice cream maker. It works fine, just have to make sure everything's cold before you start it up!
In other words, not all fruit purees will have the same sugar content/density, hence, your freezing problems....
