My roommate's family every Saturday has "Family Night". They go out for dinner or have a potluck and then they play games (no TV allowed). About once a month they spend the whole day together (all day barbecue, a park day, drive to a scenic spot, go to a sports event, etc.).
Another friend of mine has a young family and every day after dinner they walk together to a nearby playground and watch the kids play.
Both of these families are very close. You just have to find what interests everyone in the family. Have a good time!

You can do all kinds of things. Maybe have everyone pick something they enjoy and then include the family in doing it. Try doing outdoors things that everyone can enjoy - the beach, hiking, camping, etc. You can also go to the movies together, bbq, - basically anything where you are spending time together and are able to talk is a good setting.
Just try new things - get involved in a family hobby of some sort. Talk to your family members and get some ideas.

I don't think you can schedule regular bonding sessions. Just try to do everyday stuff together. For instance my family is one of those that played together... and one of my parents favorite bonding moments was a few years ago (my brothers and I were in our late teens) and we all painted the living room together. Nobody wanted to paint--but by the time we made fun of the music selections my Dad played and who got more paint on themselves... all that stuff that goes along with spending Saturday painting... we were having fun...it was a really good experience and a fond memory for me too.

Make sure to eat dinner together every night , at least as often as possible. At dinner every one has to answer 2 questions. What was the best part of your day? What was the worst part of the day? Also try cooking together, each person is responsible for a part of the meal.

Karate, bowling, movies, sports, church, swimming, fishing, camping, eating together, cooking dinner together, family chores, doing nice things for others in need, visiting with other family members together. Doesn't matter as long as there is communication, and quality time is spent together.
