I have a book called "How to be a Dad to your little man" but 90% of it he can't do because he's too young and the situations just don't apply to him yet. But I want to use this quality time to celebrate each month and each year of his life. Most of the time when it's just us, I'll take him on errands with me or take him to the park but I wanna do more.

Every now and then ask him what he wants to do. It might be getting on the floor and playing blocks or going to the beach, cooking ANYTHING! As long as you are doing it together and you show interest in what he is doing then THAT is quality time.
(you sound like a great Dad, he is lucky to have you)

try swimming, playing ball, cuddling him while watching a movie & eating popcorn, read to him, go out for surprise ice cream dates, fly a kite, tell him a story while looking up at the sky. just anything that feels right. you don't need a silly book to be a good dad. that just comes naturally, like it does for women. he is your little man, he just needs you in any and every way.

go to the beach
play ball sports with him to teach him hand / eye coordination
join a club and take him with you - just a 'you and him thing'
play with him in the backyard - hide and seek, badminton or the like.
There are heaps of activities just look around.

You can try finger painting, sculpting with clay or play dough, drawing on the sidewalk with chalk. Now is also the time of year when you can make a gingerbread house with him...let him help you bake it and decorate it.

Teach him the alphabets, flash cards, lego, teach him to swim, jigsaw puzzles, musical instruments......
