Potato Soup
3 t. butter
3 C. sliced or chopped leeks (you can substitute onions)
3 T. flour
2 qts. water
salt and pepper to taste
4 C. potato chopped
1/2 C. heavy cream
3 T. chopped parsley
Melt butter in a 5 quart pan. Add leeks and cook slowly for 5 minutes without browning. Blend in flour and cook for 2 minutes. Gradually add water, stirring to prevent lumps. Add potatoes, bring to a boil and simmer partially covered 45 minutes. You can prepare ahead to this point if you like. Before serving bring soup to a simmer and stir in cream, parsley and 3 T. more butter.

DIRECTIONS:
Place potatoes and chopped onion in a deep stock pan, and add water just to cover them. Bring to a boil, and cook until tender.
Add butter or margarine, bacon bits and fat, and carrots. Stir in milk, parsley, and instant potatoes; bring to a light boil. Salt and pepper to taste. Cover, and simmer on low until you are ready to eat.

Baked Potato soup
INGREDIENTS:
1/3 cup butter
1/3 cup all-purpose flour
4 cups skim milk
6 large baking potatoes, scrubbed
1 cup sour cream

DIRECTIONS:
Microwave potatoes until done.
While potatoes are cooking make a roux over low to medium heat. Mix butter, margarine, or light olive oil, and flour. DO NOT BURN THE ROUX. When roux is thickened a bit, gradually blend in milk. Continue cooking over low to medium heat while preparing potatoes.
Peel and cut up potatoes. You may want to mash some of the potatoes also. Add potatoes to the milk mixture. Blend in sour cream. Soup is ready to be served.

Loaded Baked Potato Soup

2 cups chicken broth
3 med. potatoes - peeled, cubed
2 green onions - trimmed, sliced
1/2 rib celery - minced
1/4 med. carrot - grated
2 tsp. distilled white vinegar
1 tsp. salt
1 1/2 cups milk mixed with 2 Tbls. all-purpose flour
1/4 cup shredded cheddar cheese
1/4 cup shredded Monterey jack cheese
2-6 strips cooked bacon - crumbled
-Bring first 7 ingredients to boil in a saucepan over medium-high heat.
-Cover and simmer over medium-low heat for 20 minutes, stirring occasionally.
-Whisk milk/flour mixture into saucepan; stir in cheese and bacon.
-Simmer, uncovered, 5-8 minutes, or until thick, stirring constantly.

How to make a Creamy Potato Soup
Ingredients
6 slices Bacon 2 cans (10.5 oz) Cream of chicken soup undiluted
1 cup Onions chopped 2 cups Milk
2 cups Potatoes cubed 1 teaspoon Salt
1 cup Water 2 tablespoon Parsley snipped
InstructionsIn saucepan, cook bacon until crisp. Pour off all but 3 tablespoons drippings from saucepan. Add onions; brown a bit. Add potatoes and water. Cook, covered, about 15 minutes or until potatoes are tender. Blend in chicken soup, milk and salt. Heat, but do not boil. To serve, garnish with crisp bacon and parsley.

Boil some peeled and chopped potatoes with a chopped vidalia onion and a pat of butter. Make a paste of 1/4 cup flour and 1/2 cup canned evaporated milk and when the potatoes are fork tender stir in the paste and the rest of the can of milk.

you can look up a recipes on line but usually it is cooking the potatoes in chicken broth. When the potatoes are done you blend all. Then add cream and salt. Pepper adds black spots so white pepper is best.
Oops...I forgot to add onions that have been sauteed in butter before the boiling and other cooking starts.

America`s Best Baked Potato Soup
Ingredients:
5 medium baking potatoes
8 slices bacon
1 cup sweet onions -- chopped
2/3 cup all-purpose flour
6 cups chicken broth
2 cups half and half
1/4 cup fresh parsley -- chopped
1 1/2 teaspoon garlic -- minced
1 1/2 teaspoon dried basil
1 teaspoon salt
1 teaspoon coarsely ground pepper
1/2 teaspoon hot sauce
1 3/4 cup shredded cheddar cheese -- divided
1 cup green onions, sliced -- divided
1/4 cup fresh parsley -- chopped
Directions:
Wash potatoes; prick several times with a fork. Bake at 400 degrees for 1 hour or until done; let cool. Peel potatoes, and slice crosswise. Cook bacon in a large skillet until crisp; remove bacon, reserving drippings in skillet. Crumble bacon, and set aside. Cook onion in drippings, stirring constantly, until tender; add flour, stirring well. Cook 1 minute, stirring constantly.
Gradually add chicken broth; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in potato, half-and-half, and next 6 ingredients. Bring to a simmer, and cook, uncovered, 10 minutes (do not boil).
Stir in 1 cup cheese and 1/4 cup green onions. Cook until cheese melts, stirring often. Ladle soup into individual soup bowls. Top evenly with crumbled bacon. Sprinkle evenly with remaining 3/4 cup cheese, 3/4 cup green onions, and parsley.
