my pie crusts just don't seem to work,im having a dinner party and i can't afford to screw up tonight

Yes, you can, it might even be better than regular pie crust. The kind of cookies would depend on what fruit I was using. Apple would get vanilla, apricot would get chocolate. I am thinking of using the premade ones from the baking aisle, but if you are making it from scratch, you have even more choices.
But you know, you can get premade frozen regular pie crust and they are really easy to use.
Another way to go is buy some frozen puff pastry and make your tarts with that.

I have used Lorna Dunes, but any shortrbread cookie could be made into crumbs, combined with butter and used as a cookie crust.

Sugar cookies is the most popular and polyvalent in this case. You could also use a graham crust.

I would use vanilla wafers, Chocolate wafers, graham crackers, or sugar cookies. You know that now nabisco has come out with a chocolate graham stix that would also work very well.

roll or pat a sugar cookie dough out on a pie plate a bake... then fill with your fruit, and other toppings (whipped cream cheese, creme freche, whipped cream, etc.)

a sugar cookie would work quite well. Or even a lemon cookie.

use vanilla wafers. why not consider a graham cracker crust.
