Is there another way to grill chicken other than Bar-B-Queing it?

Grilled Caribbean Chicken Breasts: Chicken breasts marinated in the flavors of the Caribbean isles: Citrus, garlic, herbs and a little hot sauce for spice!

Recipe:
1/4 cup fresh orange juice
1 teaspoon orange zest
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 teaspoon minced fresh ginger root
2 cloves garlic, minced
1/2 Spanish Onion
1/4 teaspoon hot pepper sauce
1/2 teaspoon chopped fresh oregano
1 1/2 skinless, boneless chicken breasts

*Season chicken with salt, pepper, garlic powder, onion powder, and cajun season....flavor to your liking

Directions:

In a blender, combine the orange juice, orange peel, olive oil, lime juice, ginger, garlic, hot pepper sauce and oregano. Blend into a marinade.
Place chicken breasts in a nonporous glass dish or bowl. Pour marinade over chicken, cover dish or bowl and refrigerate to marinate for at least 2 hours, or up to 24 hours.
Preheat oven to broil OR preheat grill to medium high heat and lightly oil grate.
Remove chicken from marinade (disposing of any leftover marinade) and grill or broil 6 inches from the heat source for about 7 minutes per side, or until chicken is cooked through and no longer pink inside.

If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.

Or, I've also made a ponzu style sauce as a marinade.
1/4 cup soy sauce,
1/8 c vinegar,
1/4 of a fresh ginger root, skin removed and sliced,
1/2 bunch cilantro, chopped
1 tsp sugar,
1 whole green or red chili peppers (they're like jalapenos but smaller, found in the asian market. ok to use jalapenos too) cut up

In a bowl add the ingredients and Mix well.

In a baking dish, add the chicken pieces- Pour the marinade and let the chicken sit for 10-15 minutes.

Cover with foil and Bake at 350 for 20 minutes. Remove foil, flip the chicken, and bake for an additional 5-10 minutes or until wings are done.

Or, to bbq, take the chicken off the mariade and grill/bbq

There are lots of different ways. I like taking boneless chicken breasts and using a lemon pepper mix (sold in grocery stores) and then wrapped with bacon and grilled. Then serve with your favorite dishes. I like using spinach with pineapple bits with rice served as a side dish.

cut up and then cut some jalepenos,zuccini,onion and cook together until veg are soft and make some refried beans and spanish rice and tortillas a great dish if you like mexican food...
