Because it is a dairy product, and like all other dairy products (milk, yogurt) it can spoil. It will prob get all curdy and nasty and then it will be like eating cottage cheese instead of sour cream, right? so the question you should bew asking is " why is there an expiration date on cottage cheese?" maybe i'll go post that right now.

If the manufacturers put an expiration date, it means you shouldn't use the product after that date.

After you open it, it can turn "green" on you if you don't use it up. Check it out about a month or 2 after it expires & you'll see what I mean.

There is an expiration date on everything....its mandated

So you know when to throw it out. The fuzzy green mold is usually a tip off that it is no lnger any good.

the reasons are liability issues, and for your safety, it is like a warranty, they are only responsible until expires.
