It's an aggressive posture that protects the cat's ears. You'll notice that the cat will also usually arch its back and try to make itself appear bigger. This is to disuade other cats or animals from wanting to fight. They also make that guttaral, evil growl. Again, same thing. The ears go back in the event that the other animal calls their bluff, preventing one from being torn off in the scuffle. It's also one of the few times the claws will be extended other than when it is trying to catch prey.

A cat that lays her ears back is trying to defend herself or something made her angry. Additionally, you can see that she doesn't move at all or moves slowly like she is trying to grab her loot. Don't even think to touch her in that situation, just stay away from her. She 'll surely attack you.

Here's my theory, backed up by absolutely no source.
When they're mad the ears go back, because in a fight, the ears are vulnerable and delicate; the flattening of the ears would protect them.

If a cat lays their ears back, it usually means they're angry. If they're flat (straight out to each side), that's usually a signal that they don't want to hear whatever you're saying to them. It means "neutral" or peace.

Oh! Ah Watch out When they lay their ears back that means their realy mad dont try pushing them back up....trust me I know. My famlie and I call it devil ears cuz my cat looks like a little devil when she dose that! So when you see you cat do that say back... they will atack at any time!

because its a sign that they are ready to attack,or they're saying "BACK OFF".
(My family has TONS of stray cats roaming around our neighborhood,I know alot about cats)

From my experience it shows that they are either afraid or upset. Take it as a warning or you might end up with some scratches.
