actually i use to store it in fridge for 5-10 days.cos we indian people use it in curries a lot.we couldn't get it easily in english stores.so we got it more than usual,store it in freezer.but when try to use it after 1month or so,its so soft & oozes juices when try to cut with knife.what can i do......

Ginger can be stored for six months or longer in sherry. Peel and cut the ginger into pieces about 1 1/2 inches thick. Place the ginger in an open necked, screw top jar (I use a recycled quart size, glass mayonnaise jar) and cover with dry sherry. Close the container and keep refrigerated. Use exactly as you would fresh ginger. The sherry in which the ginger is soaked is also nice to sip when you have a cold or upset tummy. This method can also be used to keep Galanga or Galangale.

If you wrapped it with kitchen towel properly and keep in the fridge a least it can last you for 3-4 weeks or you can blend it first then store it in a jar ( the amount you want ) and freeze it .

yes, you can freeze ginger, just do so when it is fresh, not after it has been in the refrigerator for a long time

Yes, ginger freezes well, just use a grater whenever you need some.
