Easy Chicken Parmesan
Ingredients:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese
Directions:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden.
Simple Lemon Herb Chicken
Chicken seared in lemon and herbs proves that good taste does not always depend on a lot of ingredients.
INGREDIENTS
2 skinless, boneless chicken breast halves
1 lemon
salt and pepper to taste
1 tablespoon olive oil
1 pinch dried oregano
2 sprigs fresh parsley, for garnish
DIRECTIONS
Cut lemon in half, and squeeze juice from 1/2 lemon on chicken. Season with salt to taste. Let sit while you heat oil in a small skillet over medium low heat.
When oil is hot, put chicken in skillet. As you saute chicken, add juice from other 1/2 lemon, pepper to taste, and oregano. Saute for 5 to 10 minutes each side, or until juices run clear. Serve with parsley for garnish.
30 Minute Almond Chicken
Ingredients:
8 boneless skinless chicken thighs
1/4 cup KRAFT SIGNATURE Classic Herb Dressing
1 cup chicken broth
2 cups green beans, trimmed, halved
1 cup MINUTE RICE Brand Rice, uncooked
1/4 cup sliced almonds
Directions:
TOSS chicken with dressing in resealable plastic bag. Add chicken with dressing to large nonstick skillet on medium-high heat; cook 4 min. on each side or until browned.
STIR in broth; bring to boil. Cover. Simmer 10 min. Add beans; cook 5 min. or until chicken is cooked through.
REMOVE chicken from skillet. Add rice and almonds. Remove from heat; cover. Let stand 5 min. Serve chicken over rice mixture.

Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in bread crumbs and bake 30 minutes at 325 degrees.
If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.
While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.
When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.
Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer.

Easy Chicken Parmesan:
Prep: 5 Mintutes Bake:35 Minutes
1 jar (26 0z.) spaghetti sauce
6 Tbsp. Kraft 100% Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 Ib.)
1-1/2 cups Kraft Shredded Mozzarella Cheese
1. Pour sauce into 13*9-inch baking dish. Carefully stir in 4 Tbsp. (1/4 cup) of the Parmesan cheese. Add chicken; turn breasts over to coat both sides with sauce. Cover with foil.
2. Bake at 375 for 30 minutes. Uncover.
3. Top with Mozzarella cheese and remaing 2 Tbsp. Parmesan cheese; continue baking 5 minutes or until chicken is cooked through and cheese is melted.
Serve over hot cooked pasta, if desired.
Makes 6 servings.

Kata Masala
1kg Chicken cut in pieces
3 red onions finely chopped
3inch piece ginger chopped
6 cloves of garlic or more peeled & chopped
3 bay leaves
3 whole dried red chilles (kept as it is)
salt to taste.
Oil about half a cup of peanot oil or cornoil
method;Heat oil in a wok. Add all the above ingredients except chicken. Fry till onions turn brown then add the chicken pieces and fry another 10 minutes or so. Sprinkle a little water as you keep stirring the chicken. Add 1 cup of water and cover the wok and let it cook very slowly on simmer till all water evoporates and chicken is tender. Add salt. Chicken should be dry. Eat with basmati rice or parathas. Happy eating.

I take boneless chicken breasts and pound them a little..dredge them in a little oil then (combine 1/2 cup Parmesan cheese and a package of Ranch dressing (dry) mix and dredge the chicken in them..bake at 350 for around 40 minutes...good in a salad a side dish...you can do the same with boneless pork chops.

marinate the chicken in italian dressing for 30 minutes, broil, then when just about done add spaghetti sauce on top and cover with a shredded italian chees blend. makes a great chciken parmigana

If u take chicken breasts and bake them with cream of mushroom soup and then serve it over rice. it is quick and very good and maybe have a vegetable on the side.
