italian dressing, little olive oil, as much fresh garlic as you can handle, sprinke w/seasoned salt and bake at 350 for 1 hr. remove and stir in some mashed mangos and baste. place in oven for about 10 min. yummi!

for 1/2 lbs. of chicken , I use 2 c. of water . . ..

1 - in the pot , I bring the water to boiling -

2 - lower the heat , put some salt , stir it , and put the chicken , cover it .

3 - after 3 minutes , turn over the chicken , to cook the other side ., 3 minutes .

4 - add spices , lemon , a little cooking-oil , tomatoes , stir well , cook another

5 minutes or more . . .you can check it by pressing the chicken with

a fork .

Chicken Sutee
1 large chicken skinned and cut into 12 pieces
I large can Tomatoes/or 6 large red tomatoes skinned and chopped after boiling it in hot water for 8 minutes.
20 small cocktail onions
4 carrots chopped in 2 inch pieces
4 large red onions chopped finely
half cup refined oil

Method; fry onions in the oil till nice and brown then add the chopped chicken fry more, then add the chopped carrots, fryl more,then add the chopped red tomatoes fry more. Remove the chicken from the wok and transfer it into a oven proof dish.Put the cocktail onions in the chicken. Heat oven to 350degrees Farenheit. Now cover the dish with foil and put it in the oven. Let it cook for half and hour.Check the chicken. If done remove the foil or cover and let it cook awhile longer till it is nice and red in colour. Eat with brown bread ,or pasta or rice .
Can add some cream for decoration .

1/2 lb chicken breasts, cooked (ie: boil or grilled), boned and skin removed, and chilled. Or 2 boneless breasts.

1/2 avocado, ripe and diced
1/2 bunch cilantro, finely diced
1 tomato diced
1/4 of a cabbage, sliced and diced

diced celery/onion, optional
1 jalapeno, finely diced with seeds removed, optional

mayo
salt/pepper to taste

Pull apart the chicken breast and shred or dice. Put aside.

In a large bowl
Add the cilantro, tomato and avocado.
Add the celery / onion, jalapeno dash of salt/pepper.
Add the cabbage and 2 -3 tbsp of mayo or just enough to moisten to your taste.
Chill for 1/2 hour and serve cold, topped with the chicken or mix the chicken into the salad before serving.

Serves 2-3

I use boneless skinless chicken breast. I use a little butter, some Tony's, and some honey. Cook it on low heat with a cover and let it cook. I serve with it broccoli and a Green Tea.

this is our favorite recipe,, it is so easy!!

buy boneless chicken breasts,, get a jar of salsa (we use medium,, but you can use hot, mild)

line a cake pan with aluminum foil for easier cleanup

place chicken in pan, pour salsa over it, and bake at 350 degrees for about an hour,,,,

you will have the most moist chicken you will ever taste,, we have it at least once a week,,,, just cuz its so easy!!!!

take your chicken and
in a bowl place soy sauce
then shake this mixture on the chicken
1 tbs. onion powder
1 tbs. garlic powder
i tbsp. sugar
shake on chicken Delicious
bake at 350 degrees until done ( varies on oven temp)

Stir fry with lots of veggies and I make many different sauces so you can have sweet or hot or what ever you want for sauce. And as for the veggies you can use what evey you have on hand.
I also grill it alot. Rub with spices and grill bonelss skinless.

Fried Chicken

for batter use Buttermilk (wet) & flour, cornmeal, cayenne pepper, salt, black pepper, garlic powder (dry) coat like normal & fry in Veg. Oil in a deep skillet
