Ideally you used grilled or blackened fish. Pick a firm fish like red snapper. You can also used fried/battered fish, but that is the pathetic americanized way of doing thing. Rubio's serves them like that and claim they are straight out of Mexico. I have been to Mexico countless times and I have never had fried fish in my tacos. Throw it on some corn tortillas with lettuce or cabbage and some cheese. You can make different sauces for it, but it is best by going simple and using some good salsa.

there's a few different ways to make fish tacos.
1. the fish - use whole filets of some generic whitefish, you can either beer-batter and fry the fish, or just fry or grill the fish
2. put the fish in a corn tortilla. add cabbage. generally fish tacos done in the baja style use a mild cream-colored sauce.
3. top it to fit your style - some just eat fish tacos with just a little salsa on the cabbage/fish/white sauce, and others go all out with some cheese, chunks of tomatoes, etc.

Oh, ick! What a nasty idea! Seriously, you make 'em as you would any other taco. You can do quite nicely with salmon and trout. I've had one made with catfish, too, and though I much prefer chicken and beef tacos, it turned out pretty good. Guess I'm just a traditionalist at heart. But hey - fish is a lot better for ya than beef or pork, so I say Go For It! Don't forget the salad, either!

Caribbean Fish Tacos

Makes 2 servings
Start to Finish: 30 minutes

Ingredients
6 ounces fresh or frozen halibut steaks, cut 1 inch thick
3/4 cup chopped, peeled mango
1/2 cup chopped, seeded tomato
1/3 cup chopped, seeded cucumber
2 tablespoons snipped fresh cilantro
1 tablespoon thinly sliced green onion
1 small fresh jalapeno pepper(s), seeded and chopped
1-1/2 teaspoons lime juice
1/4 teaspoon Jamaican jerk seasoning
4 6-inch flour tortillas
1 cup shredded spinach or lettuce

My favorite fish to use in a fish taco is tilapia, which you can dice and simmer in a bit of vegetable oil with your choice of spices or salsa. When it is cooked, set it aside to stuff the tacos with. Fish tacos usually are made with yellow corn tortillas (crispy or soft), shredded cabbage, the cooked tilapia meat, and onions or tomatoes. It is up to you what you put in them though. Enjoy!

Here's a good recipe I think you might like.

INGREDIENTS:
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped fresh cilantro
1 (1.25 ounce) package Taco Seasoning Mix, divided
1 pound cod or other white fish fillets, cut into 1-inch pieces
2 tablespoons vegetable oil
2 tablespoons lemon juice
1 package (12) Taco Shells, warmed

Toppings: shredded cabbage, chopped tomato, lime juice,Taco Sauce

DIRECTIONS:
COMBINE sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl.
COMBINE cod, vegetable oil, lemon juice and remaining seasoning mix in medium bowl; pour into large skillet. Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with fork.
FILL taco shells with fish mixture. Top with cabbage, tomato and sour cream mixture, lime juice and taco sauce.

Use small pieces of fried fish instead of what ever meat you normally use in tacos.
I like fish tacos they are great.

my mom makes some really good ones I don't know the recipe on top my head but im me later and I can get it for you

Fry the fish...gently...then get some corn tortillas and warm them up carefully...then put the fish in the torilla and then fry the tortilla with the fish in it...YUMMY
