traditionally, fajitas are made with skirt steak. ask for it from the butcher counter. it is a very long, flat cut, perfect for grilling. it has some good marbling to it, but i would highly recommend that you marinate it beforehand (just put it in a plastic baggie and dump seasonings and sauces inside) ... or i've had luck just rubbing it before i put it on the grill.
always remember to cut across the grain of the meat, it makes a HUGE difference in the texture of the fajitas.

Good day? Sirloin steaks? That could get pricey-:)

It should be "Para Milanesa". It is basically flank steak, it is also known as "Skirt Steak". It is cut thin, and its primary use is Stir Fry's, and Fajitas. It is available pretty cheap, because of beef prices the cost varies region to region. You should be able to find it in any supermarket.

Skirt Steak is the best but it must be cooked a long time if you want it tender. Put Lemon pepper on it.
Price is about 1.29 a LB

Skirt steak or Flank steak are traditionally used. Neither is very expensive.
