I've never tried this, but a neighbor kid does it all the time. She's particular to Brown Sugar and Maple flavored.
2 packets Instant Oatmeal
1 egg
1/4 C. butter - melted
4 T. brown sugar
1/4 C. all-purpose flour
1/2 t. vanilla
Preheat oven to 350°F.
grease a small baking sheet. Combine everything. Drop six lumps of dough on cookie sheet. Flatten slightly.
Bake 11 to 13 minutes until lightly browned on edges.
Yield: 6 cookies.

Preparation Steps

Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
Bake 11 to 13 minutes or until edges are golden brown. Remove to wire rack. Cool completely. Store tightly covered.

MRS. MEADOWS' CHOCOLATE CHIP COOKIES
1/2 lb. real butter
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
5 pkgs. (1 serving each) Quaker Instant Oatmeal
2 c. flour
3 bars (1.45 oz. each) Nestles milk chocolate candy bar, put in blender until consistency & size of dry barley
12 oz. bag semi-sweet chocolate chips
1 c. walnuts (opt.)
Using medium bowl and mixer on medium-high speed, combine first 8 ingredients, beating well with each addition. Put the 5 packets of instant oatmeal (regular flavor) through blender on high speed, a few seconds, until the consistency of flour. Remove beaters and work in oatmeal a little at a time and then flour, until dough is smooth. Work in ground Nestles candy and then chips and walnuts. Prepare cookie sheet. Measure out dough in level 1/4 cup measuring cups, shaping each into patties 1/2 inch thick and about 2 inches in diameter. Place 2 inches apart on prepared cookie sheets. Bake at 375 degrees for exactly 10 minutes. DO NOT OVERBAKE! Allow cookies to cool on sheet 5 minutes and then remove carefully to continue cooling on paper towels.

I have one for you and they are delicious. My husband and I call them No bake Oatmeal, Cocoa, Peanut Butter Cookies. Here is the recipe:
2 cups white sugar
1/4 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup margarine
1 teaspoon vanilla extract
1 pinch salt
1/2 cup chunky peanut butter
3 cups quick cooking oats
Directions:
In a saucepan over medium hear, combine the sugar, cocoa, milk and margarine. Bring to a boil, stirring occasionally. boil for 1 minute, then remove from heat and stir in the vanilla, salt, peanut butter, and oats.
Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in an airtight container.

Chocolate Chip Cookies
INGREDIENTS:
3 cups rolled oats
1 cup milk
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup margarine
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Soak the rolled oats in the milk for at least ten minutes.
Sift together the flour, baking soda and salt, set aside. In a medium bowl, cream together the margarine, brown sugar and white sugar. Stir in the eggs and vanilla. Add the sifted ingredients, and mix well. Then stir in the oat mixture and chocolate chips.
Drop dough by heaping spoonfuls onto the prepared cookie sheets. Bake for 12 to 15 minutes in the preheated oven, until cookies are golden brown. Cool on baking sheets or remove to cool on wire racks.
