So God says that He made all fruit (with seeds) for us to eat... But then changes His mind and says forget the all fruit part... you cant eat this one! Come on, it must have been a seedless fruit!

Nobody will ever know. We know only that it came a tree and not a bush or vine. Because they were not to eat from the tree of knowledge. But it most likely was not the apple because the climate in the Garden of Eden was not suitable for the apple to grow.

All the trees, including the tree of the knowledge of good and bad, literally grew out of the ground. However, the kind of fruit borne by the tree of the knowledge of good and bad is not specified in the Bible.While the Genesis account may appear very simple, what it says has deep significance. The fruit of the tree of the knowledge of good and bad was not poisonous but wholesome, literally “good for food.” So God’s restriction regarding this fruit was the only thing that made eating of it bad. The tree was therefore a fitting symbol of the right to determine or set the standards of good and bad, which right God reserved for Himself by forbidding Adam to eat thereof. This prohibition emphasized man’s proper dependence on God as his Sovereign Ruler. By obedience the first man and woman could demonstrate that they respected God’s right to make known to them what was “good” (divinely approved) and what was “bad” (divinely condemned). Disobedience on their part would have signified a rebellion against God’s sovereignty. This understanding of matters is acknowledged in a footnote of the modern Catholic translation known as The Jerusalem Bible: “The first sin was an attack on God’s sovereignty, a sin of pride.”

HELLO, anyone in there? this is a METAPHOR. there was not really any actual fruit. there was not any actual adam or eve.
the fruit is symbolic of the KNOWLEDGE that God supposedly forbade people.
the GOD was actually a creator being that was NOT GOD but something less. a semi-God. and he did not want people to find this out so he forbade this knowledge.
God found out about it and sent avatars to earth to tell people to look within and they would find the secret truth about the real GOD. The false god/ creator, then killed the avatars each time to silence them.
The ture real GOD hid this information inside the being or soul of each person and only the worthy can discover it and be saved. it takes hard work.
The bible story is just a CLUE for the worthy to use in their search.

The forbidden fruit is Knowledge. Even as a child, I interpreted the creation story differently from my classmates. I always viewed Eve as having the choice between happiness and knowledge. I always felt she made the right choice. Given a choice between happiness and knowledge, I will choose knowledge. I will do it every time.
This is counter to the message of nearly every religion, which is that we ought to blindly follow authority.

Isn't the definition of a fruit having seeds on the inside so if it was truly a fruit it had to have seeds.

the forbidden fruit is knowing right from wrong; and by implication being subject to laws that the wild animals and nature in general aren't subject to. this would include the criminal and civil codes.
man. natural animal man. man go insane. man no more natural animal. man insane. insane need to be controlled.
that's the fall of man.
