I think that a really nice leather bound journal would be a sweet idea. You could tell her that you want to record the first year of your life together and would like to take turns writing things in the journal. It is a beautiful memento in later years, romantic and thoughtful. And if you decide to have children, something for them to look back on. Kind of like The Notebook, by Nicholas Sparks, where the character writes the story of the couples courtship and reads it to his wife when she develops Alzheimer's.
Personally i think that a diamond anything would be a cop out, you just gave her the wedding band.

The best gift that a wife can ever have on the first day of being wed is her husband because on that day she knows why she loves him and no one else. Yea a diamond ring might be good but that is for during the wedding day not after. After all she wants is to be with her husband and no one else.

A red rose for each year or month you were together and have them sent to the church by a different florist other than the one who did the wedding flowers and a card.
