You can purchase insulated lunch bags or a small, lunch-sized cooler. Many of these come with a block you can freeze, and then you simply tuck it into the insulated pack with the lunch. They work really well and keep the food really cold.

Lunchable type foods (ie: cut up deli meat, cut up cheese and crackers) are easy and can last a while. What you can do is get those plastic disposable containers at the store. Freeze them the night before and then add the food items. In addition to the frozen juice or water bottle, that will keep the items cold. You can also buy a real good insulated lunch box/bag.
My mom used to invest in a glass thermos. Then she would put hot water inside and then gave me those cup of soups or cup of noodles. In additon you can make spaghettios or pastas.
If your son doesn't mind salads, a cool salad in a plastic ware, with the dressing on the side will be nice and refreshing in the summertime.

Yes a small bottle of water which has been frozen will act as a cooling device inside the lunchbox. You could try crudites such as carrot, celery, cucumber, red pepper, slices of wholemeal pitta bread and cherry tomatoes with dips such as humous, salsa or guacamole. Also cheese chunks, bananas, satsumas and boxes of dried fruit make great lunch time snacks :)

My mom always froze our juice box and used that as the cold pack so we didn't ever have anything to bring back home! My favorite sandwich was always cheddar cheese with Miracle Whip...(with the crust trimmed and cut into triangles of course!)

beef jerky, hard salami, crackers, cheese, nuts and fruit.
VERY important- Frozen water bottles!
Make your sandwiches on bagels and wrap them in foil. Bagels hold up really well while traveling, and the foil helps keep them cool...
