The scrape out the inside of the vanilla bean and that isn't enough to turn the ice cream brown...not with the milk and sugar.

because they use more cream than vanilla extract in ice cream.

Because if vanilla icecream were brown, it would confuse people. Chocolate icecream is brown, too.

It doesn't have much extract so the color doesn't change, or commercially it may be bleached like maraschino cherries, but I'm not sure.

Food colouring, and the milk and water were also added, which made the colour white. ;D
