If I were you and have the luxury to give a helping hand, I'll head down straight to Indonesia and not wait until 2008. You can choose either Sumatera Isle or Java.
1. Dec 26, 2004 tsunami victims in Banda Acheh, Sumatera. From what I heard MERCY and other non-profit organizations are building new shelters for the victims there... I'm sure both of you are very much welcome!!
2. Java isle - lanslide in easten java and Earth quake victims in Yogyakarta just a couple of week ago. the volcanic Mount Merapi has doubleup her activities with deadly smoke and waiting to explode.

I'd suggest two places in addition to Indonesia and Africa: Romania or India.
Wishing Well is a UK based charity that sponsors a center in Romania that provides education and other community services to Roma children including those with special needs. They have plans to expand their facility (and services) over the next two years, and provide accomodations to their volunteers.
In Northern India, I had the privilege of meeting the people who founded "Ganga First Aid Centre, which was started over six years ago to provide basic health care to the villagers in the area. ...Over 12,000 villagers have been treated at the Centre..." These people have also established ecological preserves and camps for children to become more environmentally responsible.
It's truly wonderful what you and your wife are planning to do!

I met quite a few years ago , while i was based in Rodrigues Island ( Mauritian territory ), 2 Americans who were there.
They came on this very remote and small Island to do charity work .They were sent there by " Peace Corps ".a U.S. foundation.
I do not know if this foundation still exists.

i think you're better off helping poor african children.especially that with your skill, you can help create a source of clean water while your wife helps with health issues.i tell you you'll put a smile on some happy faces.good luck!!!!!!
