museam trips are fun...trips to the park...really anything that is different is educational at this age so long as you, as a parent are involved.
even a trip to the mall can be educational so long as you talk to him and get him involved.
other than that...try play-doh and mess play like painting and collaging...
at 2 1/2 he is also old enough to start to learnt to recognise letters and number and simple words so why not use the summer to give him a head start with school...
there should be educational books available at WalMart or your Educational Supply Store...

Depending on your economic status plan accordingly.
1) Use your local Transit System. Go for bus rides! Children love riding the city bus. Of course choose routes that would be safe and enjoyable for you and your child.
2) Join a museum adult/child activity class together.
3) Learn to swim together
4) Dance together!! We used to have soooo much fun dancing with and watching our mother and father dance together!!
5) And last but most important, follow your child's lead. See what interests he has and allow that to dictate your itinerary

You can play marbles with him, teaching him the colours, the sizes, simple counting, orientation. Or you can take him for long walks in the zoo (provided there is one close by), showing him the animals and giving him simple information about their nature and background. Have you thought of taking him to the pool and teach him how to swim? If you don't know how to swim, it's a good chance you both learn and don't be disappointed if he's a faster learner than you! Or you can teach him "male" games like fotball, baseball... An other good thing is construction games like Lego with big bricks that he could not swallow even if he put them in his mouth or ...visiting friends and family who have children of his age to play with, turning him sociable.
Another idea is to ask your paediatrician for advice; they always have answers.

take him to the library, the park, take him to the zoo,take him exploring/scavenger hunting make a game out of any thing that you do with him and he will love it. just love him and see what he likes to do the most. i have a 3 year old and he just liked spending time out doors the most so i started taking him on walks and instead of calling it that I called it exploring and I just point out things like the leaves and etc. cause at the toddler age all things fascinate them if you like it.

find out what local programs they have inyour area for toddlers the zoo offers educational activities for children that age so does the library if not make fun at home he probably would love that more

Mine used to like to paint the sidewalk with a REAL paintbrush. Ohhh, they felt grownup. Using water, of course, not paint!
