(tbsp = tablespoon, tsp = teaspoon)
You will need:
2 chicken breasts.
1 cup white rice
1 green pepper
1 onion (2-3 inches diameter)
4 cloves garlic (the little things, not the big bunches) or 2tbsp of freeze-dried garlic
1 tbsp rosemary
1 tbsp chives
1 tbsp basil
1 tbsp oregano
1/2 tsp ground black pepper
1 mini-bottle (250-300ml) of dry white wine.
1 tbsp lemon juice
1 tbsp olive oil
----------------------------------------------

Mix wine, lemon juice, olive oil, rosemary, oregano, basil, chives, pepper, 2/3 of the onion (finely chopped), garlic (finely chopped).

Lay chicken in marinade in a dish so that both chicken breasts can be covered (if not covered, it will be necessary to turn the breasts every few hours).
Marinate overnight/12-20 hours.

1 hr until mealtime..
Begin cooking rice, put remaining bit of onion in with rice while it's cooking (tastes great).

Put chicken in frying pan with a bit of olive oil and cook on medium heat for 5 minutes, remove from pan and cut across breast into slivers. Put slivers back in pan and pour in the marinade with the green pepper (and i bet you thought I'd forgotten about it) cut in half and across also into slivers.

Simmer on medium to medium high, add about 1tbsp (maybe a little more) flour SLOWLY while simmering to thicken sauce. after 10-15 minutes (or whenever you think it looks right) remove from heat. Make sure you're stirring enough to prevent burning.

Serve chicken over rice, greek salad on the side is always popular.
...
Sound complicated? Its not, and its definitely a classy classy meal.
