Italian Style Meatloaf

Great for any occasion, and absolutely delicious. Excellent served with noodles (or mashed potatoes) and corn. Substitute white bread for wheat bread if you're looking for a healthier meal. For the fresh bread crumbs, use 6 to 8 slices bread crumbled into tiny pieces.

Original recipe yield: 5 servings.

INGREDIENTS:
1 carrot, grated
1/2 onion, chopped
2 cloves garlic, minced
1/2 cup chopped fresh parsley
2 pounds ground beef
1/2 cup ketchup
2 eggs
1 1/2 cups fresh bread crumbs
1 cup tomato sauce
1 teaspoon white sugar

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a medium saucepan over medium high heat, saute the carrot and onion for 2 minutes, or until onion is transparent. Add garlic and saute for 2 more minutes. Remove from heat and let cool.
In a large bowl, combine the parsley, beef, ketchup, 1/2 cup tomato sauce, bread and eggs, mixing well. Add the carrot/onion mixture and continue mixing, but do not over mix, as this will make the meatloaf dry. Transfer mixture to a 9x13 baking dish and form into a loaf.
Bake at 375 degrees F (190 degrees C) for 30 to 45 minutes.
While loaf is baking, heat the remaining tomato sauce and sugar in a medium saucepan over medium low heat. Pour over loaf when done.

Meat Loaf Recipe

Prep Time: 25 minutes
Cook Time: 45 minutes
Yield: 6 to 8 servings

6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey


Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.

Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

1 pack of lean ground beef or ground turkey
2 eggs
1 1/2 tablespoons of adobo (spanish seasoning, made by goya, found in most grocery stores)
1 1/2 tablespoons of garlic powder
1 pack of sazon (also a spanish seasoning, found in an orange box)
1/2 cylinder of bread crumbs
1 jar of spaghetti sauce

Preheat the oven to about 350 degrees

Thaw out the meat thoroughly. Place it in a large bowl. Add to it the adobo, garlic powder, sazon, and eggs. With your hands, mix the ingredients thoroughly until the egg and powders are all evenly distributed through the meat. Start adding the bread crumbs to the meat mixture. Slowly add it in, and knead the mixture, add more, knead the mixture. Keep this up until the meat barely sticks to your hands. Take a baking pan, approx. 9in x 13 in. and line the bottom with aluminum foil. Spray the bottom with Pam and then put the meat on the pan. Try to shape the meat like an even oval, not too elevated and thin, but short and fat. Cover with aluminum foil and place in the oven for about 1 hour, or until all the meat is brown. Once its cooked fully, take it out, uncover it, and pour the spaghetti sauce on it. Place it back into the oven for about 10 minutes. Voila! Meatloaf....its gooood too. :-)

I do a very simple recipe and actually comes out very good.

You mix in a food processor

onions
garlic
carrot
celery

Combine either half a pound of ground pork and half ground beef, or just use the beef. Add the mix of veggies, salt, pepper, either breadcrumbs or whole oats, one egg. Mix well and once you put it in the baking pan.......add to the top a mix of 3 tbs of brown sugar and 3 tbs of ketchup. Spread it all over the top and place in oven uncovered for till the thermometer reaches 160 degrees, about an hour and a half.


you can always add other seasonings such as parsley, thyme or whatever you like.

Oh yeah, I heat the oven to 350 degrees.

Groundbeef Roast
serves 6 (I usually half it).

1 1/2# ground beef
4 slices bread
1/2 cup milk
soak bread in milk
1 Tablespoon soy sauce
1 egg beaten

Mix all this together pat into pie pan or casserole pan

1/2 onion thinly sliced into rings
1/2 lemon thinly sliced
1/2 bell pepper sliced in to "rings"

Spread out on top of meat loaf


1/4 cup catsup
3/4 cup water

Mix together pour on top

cook at 425 in oven for 30 minutes

Serve with baked potato and green beans.

2 lbs ground round
1 lb pork sausage
1/2 lb ground ham
1/2 lb bacon
8 oz fresh mushrooms ..chopped well
2 bunch green onions....chopped
2/3 c each red ,yellow, orange an green peppers
1c rolled oats
i can cream of mushroom soup
4 lg eggs
1 1/2 lb sharp cheddar grated

mix all together except fer bacon put into 2 lg bread pans top with the bacon bake at 350 fer 65-75 minlet rest bout 14 min befer slicin this makes awsome cold sandwiches as well as main meal....

1 lb hambuger, 1 egg, 1/2 cup chopped onion, 1/2 cup chopped bell pepper, a little pepper, a little garlic salt, a squirt of ketchup, enough crackers to bind, but dont get to dry, mix it all togather and put in a pan and then put ketchup all over the top and bake approx 1 hour uncovered. on 350

Meatloaf Patties, Smashed Potatoes, and Pan Gravy

Cook's Notes: Buy tomato paste in the tube, rather than a can; it makes storage of leftover product easier. Tomato paste in the tube is often kept with Italian specialty foods, rather than with the canned tomato products.

1 1/3 pounds ground sirloin, 90 percent lean ground beef
1 slice white bread, spread with softened butter, then cut into small cubes
1/8 cup (a splash) milk
1 egg
2 teaspoons grill seasoning blend, or coarse salt and black pepper combined
1/2 teaspoon ground allspice
1 rounded tablespoon tomato paste
1 medium onion, finely chopped, reserve 1/4 amount
2 pounds small red potatoes
2 tablespoons butter
2 tablespoons sour cream
2 scallions, chopped, whites and greens
1/2 cup milk
3-Condiment Pan Gravy:
2 tablespoons butter
1/4 medium onion, finely chopped, reserved from meatloaf mixture
2 tablespoons (a handful) all-purpose flour
1 to 1 1/2 cups beef stock
1 tablespoon ketchup
1 rounded teaspoon spicy brown mustard
1 tablespoon steak sauce
Serving Suggestions:
Baby Carrots, recipe follows
Dressed Tossed Salad

Place meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread cubes and dampen them with a splash of milk. Pour 1 beaten egg over bread and add seasoning or salt and pepper, allspice, tomato paste and onion to the bowl.
Combine the meat, bread and grill seasoning or salt and pepper and form mixture into 4 large oval patties 3/4-inch thick. Pan fry meatloaf patties in a nonstick skillet over medium high heat 7 minutes on each side under a loose tin foil tent. The tent will reflect heat and allow the steam to escape the pan.
Cover the quartered, red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to hot pan and warm stovetop to dry potatoes out. Add butter, sour cream, scallions, and milk to potatoes and smash to your desired consistency. Season potatoes with salt, to taste.
Remove meat loaf patties to a platter and return pan to heat. Reduce heat to medium and add butter and onion to your skillet. Cook the onion 2 minutes and sprinkle pan with flour. Cook flour 1 minute and whisk in 1 cup beef stock. Bring broth to a bubble. If gravy is too thick, thin with additional stock. Stir in condiments and remove gravy from heat.
Slice meatloaf patties and drizzle with gravy. Pile smashed potatoes along side and make a well in the center for sour cream or gravy. Serve meatloaf and smashed potatoes with baby carrots, or with a tossed salad dressed with oil and vinegar.

if you like mushrooms, the recipe on the Stove Top stuffing mushrooms and onions box is the best i have found yet.

I usually have a box, but I can't find any and I can't find it online. If you find it, I promise you it's a moist and delicious meatloaf.
