platanos maduros frito ~ fried yellow bananas (the extra large bananas)
Relleno de papa ~ potato filled with meat (ground beef) and sauce
Bacalaitos ~ cod fish fritter
Acapuria ~ like the relleno de papa but instead of potato, it has other vegtables
The taco is Mexican not Puerto Rican

I don't live in Puerto Rico anymore, but the easiest thing to make might be fried plantains, or tostones. You are supposed to mash them a little before you fry them, or soak them in water after they have been fried slightly, mash them slightly, then finish frying them. You can sprinkle some salt on them. Also chicken and beans and rice are a basic Puerto Rican dish. The seasoning is accomplished with sofrito - which is a mixture of chopped garlic, onion, cilantro, and green peppers all blended up. Many Puerto Ricans also use Sazon packets of seasoning, but I don't because it contains monosodium glutamate. If you want to add a green salad, just use oil and vinegar dressing as that is the most common kind I found there. Dessert might be a cream cheese turnover known as a quesito, or you could make flan (Jell-O has a mix out) or just slice up mangos.

Not really a soup, asopao, a hearty gumbo made with either chicken or shellfish. Basically a non-spicy chicken stew or shrimp stew. Spices such as oregano, garlic, and paprika, plus weird stuff like salt pork, cured ham, green peppers, chile peppers, onions, cilantro, olives, tomatoes, chorizos (sausages), and pimientos. For a final touch, green peas or asparagus might be added. Sounds pretty crazy huh?

Arroz con pollo (chicken with rice) is originally from Puerto Rico- think we all know that one- and was brought long ago to the U.S mainland.

Beans and rice (You can get a great recipe from the can.), Pollo Gizado (The spelling isn't going to be great because DH drops the endings of his words so it isn't usually spelled the way it sounds.), maduros, flan with jello in it...I wish DH were here, he'd have a huge list.
