Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in bread crumbs and bake 30 minutes at 325 degrees.
If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.
While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.
When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.
Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer
For a salad try this
MEXICAN CHICKEN SALAD
1/2 lb chicken breasts, cooked (ie: boil or grilled), boned and skin removed, and chilled. Or 2 boneless breasts.
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
Pull apart the chicken breast and shred or dice. Put aside.
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold, topped with the chicken or, mix the chicken into the salad before serving.

SALAD - Its so healthy.
You can make it with anything in it, as well as the normal stuff. Try:
-Bacon
-Pasta
-New Potatoes
-Tuna
-Lentils or Beans
-Croutons
Its nicest served in seperate bowls, and to make it even nicer and less healthy i either put some fried goats cheese on it or serve it with some poached Camembert (dont think thats spelt right) - heat some cheap white wine until it's nearly boiling, then just drop it in. If you like garlic you can slice some garlic and stick it into it before cooking.Cook it for about 3-5 mins. It doesn't sound too nice but if you do it right it has a really clean and creamy taste.

Mexican Pizza!!! This is amazing- your family will love it. I like to add extra cheddar cheese to mine...
This version of the pizza recipe using boboli crusts is excellent and fast.
INGREDIENTS:
1 onion, chopped
4 garlic cloves, minced
2 Tbsp. olive oil
16 oz. can refried beans
18 oz. jar taco sauce
8 oz. can tomato sauce
1 Tbsp. chili powder
1 tsp. cumin
4 oz. can green chilies, drained
2 cups frozen soy protein crumbles
2 large Boboli pizza crusts or Scratch Crust Recipe, below
4 cups shredded Cojack cheese
Saute onion and garlic in olive oil until tender. Add beans, taco sauce, tomato sauce, chili powder, cumin, and soy protein crumbles. Stir well, and heat until crumbles are softened.
Spread sauce evenly over both pizza crusts.
Top with shredded cheese.
Bake at 400 degrees for 20-25 minutes until cheese is melted, bubbly, and begins to brown, reversing pans and racks once during cooking time.
