They are:

My Music
My Pictures

Other apps often add additional folders. For example:
MS Media Player 9 and 10 add "My Videos"
Visio adds "My Shapes"
Yahoo! widgets adds "My Widgets"
Skype adds "My Skype Pictures"
Paint Shop Pro 8 adds "My PSP8 Files"

Removing all your personal info depends where you have saved your files. You can create a folder anywhere in My documents, desktop, Windows, etc. By default, sub-folders are My music, My pictures, etc. (open my document folder). You might also want to erase your internet cookies (history of your web activities). Open the interenet explorer web browser, click on tools, then click on internet options. A box will pop open, click on clear history and delete cookies.
