The best way I've had it was chinese style.

Ingredients:
Lobster
Fresh Ginger, about 3 tsp, sliced and skin removed
Fresh Garlic, about 3 cloves, sliced or crushed
1 bunch of green onions, loosely sliced
flour or corn starch
Water

Chop the lobster into pieces, using a cleaver, chop off the claws, then divide the body into 3 or 4 pieces. When severing the head from the body, try to cut it cleanly off the body.

In a bowl add 1/4 cup of cold water and 1 tsp of corn starch. Mix well until dissolved. Put aside.

Using a wok or hot skillet, add 3 tsp of oil, heating to med/high.
Then add some crushed garlic, a handful of onions, and the lobster. Mix well, stir frying. Add the ginger and more onions, and more garlic if you wish. The lobster will slowly start turning red.
When it does lower the heat to med. Slowly stir in the corn starch mixture. Mix the lobster, cover for 2 to 4 minutes, mix again.

When the lobster is bright red, remove from heat. Serve hot.
Note: Even if the lobster turns red, cook for an additional 5-10 minutes to make sure its completely cooked.

Boiled Lobster
Boiling is one of the simplest ways to cook a lobster, and is probably best for the squeamish that don't wish to cut up a live lobster with a knife.

Steamed Lobster
Steaming is a great way to cook but not overcook a lobster's delicate meat. In order to properly steam a lobster, you need a sturdy and close to airtight steamer. The best steamer setup is a steamer insert inside a stockpot with a fitted, heavy lid.

Grilled Lobster
To grill or bake a lobster, you must first cut it in half down the center. Make sure the rubber bands around the claws stay on during this process, as you don't want to be dodging the claws while cutting up the lobster.

To kill the lobster I find the easiest way is to put it in a freezer for 40 minutes or so.
To cook the lobster I boil it in clean seawater. I really is delish!
Once cooked I put it in a plastic bag and put it in some ice so that it stops cooking in the shell.
You will find lots of nice recipes if you google lobster recipes or crayfish recipes. Too many too choose from!!
Enjoy!

You must make sure that you have the pinces on the Lobsters claws. Rince him while he is alive in cold water. Have a pot with boiled spices going and just place hinm in there for ten minutes.
Now you are ready to serve him with a garlic sauce and baked potatoes. Yummmmmy. Baking is too dry a dish. He will be more suculent in the water. Don't cut him in half for sure. You put him in the pot in whole, after rincing him well.
