What are some good easy recipes that I could try that don't involve going to the store and searching for weird ingredients? (Please no casseroles, pies, or anything with onions lol) Something kinda summer-y please :)

If you have it available in your region ( which most stores carry)

1 lb boiled shrimp (peeled and deveined)
1-2 packages of fresh spinach leaves ( they come already cleaned in the bagged salad section)
1 medium ripe avacado
Sliced fresh mushrooms

For the dressing I just use red wine vinegar
a drizzle of olive oil
Season to taste with Lemon Pepper

Put a few crouton (I like the cesear salad ones) on top

Enjoy !

My brother sent me this last year about this time. I never tried it until his memorial in March, he died, but he raved about this. I am going to go and find the file I saved when he sent me the recipe. It has rice in it, all stuffed pepper recipes do, but you could either remove it or use less. Maybe use wild rice. The rest of the words are his...... Papa Eddy's "Not Stuffed" Peppers 1 & 1/2 Pounds Burger Or 1 pound burger and 2 smoked links 4 Peppers. at least 2 of them green bell, 1 yellow 1 red is pretty 1 Large or 2 med Onions 2 cups rice (cooked to 4) 1 Tblsp Chicken Bullion Powder 1 Tblsp Caldo Tomate (Tomato Bullion) 1 Tblsp " " " " 2 Tblsp Cumino 1 Tblsp Wocestershire Sauce, maybe 2 after you taste the mix... 1 Large Can or box of crushed or chopped tomatoes, your texture preference Italian bread crumbs or buttered cracker crumbs (topping) Black Pepper and salt to taste, wait on the salt until the last stir before adjusting salt, the other ingredients sneak up salt wise. Start rice cooking in lightly salted water with 1 tblsp Of caldo Tomate with a goal of slightly al dente. Chop Peppers into rough cut pieces average size 1", and the curvy ends are interesting eating if you leave them kind of big.. Chop the onions to about half the size of pepper pieces.. start to soften in a nice hot skillet with good oil, when they start to show color turn off and leave alone on burner. When the rice is done dump it into a lage bowl, stir in the peppers and onions adding the Cumin and the other tbsp Caldo tomate, a quick stir or two to get the flavors married... In the same skillet as the peppers Brown the meat, drain and stir in some garlic (I like dried minced for this) and the chicken Bullion, and then dump in the tomatoes, and the worcestershire.... just get it to "starting to bubble" and dump in to bowl with rice etc.. then a small amout of green herbs I use small qty of italian seasoning but there are other directions you can go as your muse leads you.. and now give it the Mixing stir.. add a little more liquid if it seems dry, I add either chicken stock or more tomato sauce, being careful because it can get strong and salty fast. Dump into a buttered or greased casserole and bake @ 375 for 30 min covered w foil, then uncover and top with ketchup sauce --- 1/2 cup ketchup, 1-2 tblsp worcetershire, 2-3 tbsps dried minced onion or fresh if you only have that... When using dried make an hour ahead of done time of casserole. Cover with a dusting of bread crumbs, return to oven uncovered until caramelized on top... around 10-15 min Even though everything is cooked when you assemble this, it morphs into something on a higher plane in the oven! Bon appetite !!!

Easy recipe that I do is marinated chicken.
Ingredients:
boneless skinless chicken breasts
ketchup, barbecue sauce, mustard, other sauces (what ever you have and you like)
spices (chili powder, paprika, crushed red pepper, cayenne pepper, etc.)

Mix everything together and let sit in plastic bag for a while.
Bake in oven or cook on grill.

I'm not sure how to make it summery, but I suppose you could use tropical fruit juices, such as pineapple to lighten it up.

Fried Chicken Wings

You will need 2 pounds of chicken wings.

Marinate in the following ingredients overnight and deep-fry.

8 T cornstarch
4 T flour
2 T sugar
1 t salt
5 t soy sauce
2 cloves garlic, minced
2 eggs
1 T sesame seeds

"For a delicious, no-fuss ham that is juicy and good, try this slow cooker sensation with only two ingredients!"
INGREDIENTS:
2 cups packed brown sugar
1 (8 pound) cured, bone-in

picnic ham
DIRECTIONS:
1. Spread about 1 1/2 cups of brown sugar on the bottom of the slow cooker crock. Place the ham flat side down into the slow cooker - you might have to trim it a little to make it fit. Use your hands to rub the remaining brown sugar onto the ham. Cover, and cook on Low for 8 hours.

This is a great recipe to use on a grill OR in a regular stove.

Take 1 can of diet cola (any kind) and combine it with 1 cup of ketchup in a big ziploc bag. Add chicken, pork, steak or any other type of meat that you want. I've even used it mixed with hamburger meat. It makes whatever you cook REALLY juicy and yummy. I don't even use barbecue sauce anymore.

*edit* My mom said she has used other flavors of diet soda (like lemon lime and orange) and it's come out good.

since i don't know what u have in ur freezer, i'll just give u this recipe. chicken parmesean: all u need is some chicken breasts, shredded parmesean cheese and a jar of spaghetti sauce. bake chicken in over until no longer pink, pour sauce over chicken and top w/cheese. return to oven until cheese is melted. or u can go to foodnetwork.com.

Ingredients:
Boneless, skinless Chicken Breast, virgin olive oil, garlic salt, green pepper, tomato, squash, onion (but since you dont like onion you can skip that)...

directions:
lightly coat chicken with virgin olive oil, sprinkle with garlic salt.. cut up green pepper, tomato, squash and other veggies of your choice. preheat oven to 425. Cook for 35 minutes covered. Add 1/4" of water to the bottom of the dish, if needed (to ensure moist chicken). then cook for another 20-25 minutes uncovered. Depending on the thickness of the meat will determine whether it will need to be cooked longer. cut a piece in the middle to make sure it's done.

Yummy.
