Honey, I am Hispanic, actually American Indian. We've been on this land before the white man. I never learned how to cook ethnic. I was raised American. My girlfriends have taught me how to cook Pinto beans properly.

You must first soak your pinto beans, this gets rid of the ??? that cause gas. I usually do it overnight. Pour out the water that the beans have been soaking in. Using a large pot (something large enough to accommodate the swelling) add the raw pinto beans and cover with fresh water, (I always add water to about 2" or more above the beans) I salt to taste and bring to a boil. Once the boiling point has been reached I tightly cover the pot and reduce the heat to simmer. Do not peek for 2 hours, and your Pinto beans should come out perfectly pink and soft.

I also LUV using a crock pot, I just put my beans in it before I go to work, and when I come home I have fantastic beans.

When adding additional water to partially cooked beans, make sure the new water is very hot!

Your heat probably isn't high enough. Beans always taste best to me when cooked in a crockpot or pressure cooker. Add more water and increase the heat.

That's okay, sometimes they're better when they're cooked really slow. Just keep adding water every once in a while until they are done. If you turn them up too high, you might burn them. Just keep letting them cook and keep a watch on them.
