Well, you need to think about how your views tie into your paper. If it were merely an informative paper, and you never entered your opinion anywhere, then you could really choose anything that was the main focus for your paper. But say it was centered around something specific, and it was obvious that you were persuading your audience towards that idea- I would go with a quote that sums up your intentions, (thesis) and restates the whole point of the paper.

Make sure you don't add anything extra that wasn't already stated in the paper, and don't overdo it. The conclusion paragraph should be the "...and this is why I believe all this" kind of thing.
