The most painless way to deal with a fish you have caught is too put it back in the water and let it swim free. But by the sounds of the question it's not really an option. I would think that cutting off the head with a very pointed/sharp knife (so that it is done quickly with one stroke) would be the least painful way. Don't leave it by the river bed, that's just a way of prolonging its misery.

I caught a 16 inch bass and my mom would not kill it so all i did was leave it in a pail of water till it stoped swimming and started to slow in his breathing. After awhile lift it out of the pail if it does not move alot wrap it in wax paper and freeze it untill youi are ready to eat it. fillet it

What? It's just a fish? How could anyone know if fish even feel pain. Just kill the damn thing. my dad would thud it in the head with the back if the knife.
If your so worried about the fish...then what about all the bugs you kill with out even knowing it.

Fill a spray bottle with cheap tequila or other liquor and spray it on the fish's gills. Works offshore, not sure what type of fish you are looking to kill.

you place it in the freezer. as it body temp. decreases it slowly starts to die and it really wont feel anything. you fill a bag with water and place it in the freezer. when the water gets slushy you place the fish in the bag and place it back in the freezer.
