Scrambled eggs with spices (such as parsley, garlic powder, red pepper flakes, even Italian seasonings) and cheese (or you can omit the cheese), grits or Cream of Wheat (very nutritious), whole wheat/multigrain toast, quick cut-up fruit such as bananas or oranges, yogurt, etc..

There's also chicken sausage and turkey bacon that are healthier than their beef/pork counterparts. And probably the most nutritious of all is Irish oatmeal, not the flavored kind. You can flavor the Irish oatmeal yourself with honey, cinnamon, nutmeg, raisins, some nuts, whatever you like.

It is VERY filling, extremely healthful, and pretty easy to prepare.

Mix a couple of eggs and whatever other ingredients you would normally use for an omelet. Pour everything in a zip-lock bag and boil for approx. 15 minutes. Cut top off (don't open from the zip lock to avoid steam burns) and the finished omelet will roll out on your plate. You can prepare mixtures of this sort with all different types of ingredients, ham & pinapple, sausage and onion, etc., on Sunday afternoons and freeze. Defrost the night before use and have a homecooked breakfast everyday of the week.

Applesauce Pancakes

1 cup biscuit mix
1/2 cup skim milk
1/2 cup applesauce, unsweetened
2 egg whites

Combine biscuit mix, milk, applesauce, and egg whites in a medium mixing bowl. Blend just until dry ingredients are moistened.

For each pancake, pour about 1/4 cup batter onto a hot lightly greased griddle or skillet. Flip pancakes when tops are covered with bubbles and edges look cooked.

Yield: 6 4-inch pancakes

Spiced Apple Syrup


1/2 cup applesauce, unsweetened
1/2 10 ounce jar apple jelly
1/4 teaspoon ground cinnamon
dash ground cloves
dash salt

Combine all ingredients in a small saucepan.

Cook over low heat, stirring occasionally, until jelly melts and mixture is blended.

Yield: 3/4 cup


Jungle Muffins


1 1/2 cups all-purpose flour
1 cup oats
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup raisins
1 cup banana
1 (8 ounce) can crushed pineapple
2 tablespoons vegetable oil
2 eggs
1/2 cup sugar
1/2 cup brown sugar

Combine flour, oats, sugar,baking soda, baking powder, salt, and cinnamon in medium mixing bowl.

In another bowl, combine eggs, oil, pineapple and bananas until well blended. Stir in raisins. Add liquid mixture to flour mixture, stirring to blend evenly.

Spoon mixture into muffin cups, lined with paper or sprayed with vegetable oil.

Bake at 350 degrees for 10-12 minutes.

okay here is a few... buy teh sausage patties or microwave bacon take teh new wheat english muffins add sausage or bacon and cheese. another one take cut strawberries, blueberries and take plain or vanilla yougurt and add to top of berries and crush up graham crakcers to sprinkle on top and another one is buy the premade panckaes or waffles and add a cooked egg and a slice of cheese.

take some banana, strawberry, and blueberry yogurt and make a hole in a large whole grain muffin. mix the yogurt then put it in in the muffin hole. then enjoy!!
