Baking Powder Biscuits
2 c Flour
4 ts Baking powder
1 ts Salt
2 TB Shortening
1 c Milk (or buttermilk is way better)
Sift dry ingredients together. Rub in shortening, add
milk gradually. Mix to a smooth dough, roll out
1/2" thick. Cut with biscuit cutter. Handle as
little as possible to make light, flaky biscuits.
Make sure the oven is HOT when you put your biscuits in.

Any biscuit recipe will do. I suggest getting one from www.allrecipes.com or from a basic cook book (Betty Crocker, Fannie Farmer, etc.) The KEY to flaky biscuits is to use lard as your shortening. If the recipe calls for shortening, use lard.
