I've got this great stuffed zucchini recipe and meat is totally optional. I take a zucchini, slice it in half the long way and scoop out the seedy center with a spoon. Then I stuff it with a mixture of: half the seed/pulp of the zuchhini, chopped onion and garlic, chopped (FRESH!) button or bella mushrooms, chopped basil from my garden, some of those frozen hashbrowns that have thawed, and whatever veggies you like-peppers, or carrots, etc Just make sure to chop them small. Then I put both halves in my little casserole dish and cover them with spaghetti sauce and sometimes cover that with mozzerella cheese and bake it at 350F for about a half an hour. (I just had that for supper last night!)

well there are a lot of possibilities i was a veggie girl for years but now explore all foods. i have quite a few recipes like a shredded veggie(use chesse grater) dish that u shread carrots zuchini squash onion garlic bell pepper mushroom and tomatoes stuff in manaccoti shells and serve a garli butter sauce on top or i cut up all thoose veggies and place in foil throw on top of bbq coals along w italian dressing and butter inside and cook ten minutes while those are cooking grill some portabella mushrooms on teh grill and some pineapple slices and make a yummy pinapple mushroom burger yummy

If its hot out, and you want a cool salad--

1/2 avocado, ripe and diced
1/2 bunch cilantro, finely diced
1 tomato diced
1 cabbage, sliced and diced
diced celery/onion, optional
1 jalapeno, finely diced with seeds removed, optional
mayo
salt/pepper to taste

In a large bowl Add the cilantro, tomato and avocado. Add the celery / onion, jalapeno dash of salt/pepper. Add the cabbage and 2 -3 tbsp of mayo or just enough to moisten to your taste. Chill for 1/2 hour and serve cold

Serves 1-2

Sauteed vegetables



slice thin thin some white mushrooms after you skin the,m red onion slices, celery slices thing, water chestnut cup in half, bamboos shoot, thins sliced cabbage, broccoli florets, leaf spinach, sliced zucchini,
Snow pea pods, some sweet red pepper sliced thin.



IN frying Pan, add garlic and slice of hunger. Set on medium low.


In microwave, slightly cook vegetables for one minute medium. Add to fry pan and cover.


Throw in some nut meats, like cashews or peanuts or almond. . When steamy,m around two minutes, add some soy sauce, a little Chinese sesame oil, some salt and pepper, a pinch of wither caraway seed or else anise, just a few. Mix and recover one minute.


Thicken with cornstarch or flour and three tablespoons water.

Pasta w/ Alfredo sauce make it homemade just don't add the chicken base.Add broccoli,cauliflower carrots whatever veggie ya want.

2 table spoons butter
1/2 cup heavy whipping cream
bring to a boil add 1/4 cup Parmesan cheese
add noodles and the sauce will thicken upon standing.
Heat up any veggie ya want and add to the sauce.......Eat and enjoy!!

using quorn chicken style fillets i made chicken supreme yesterday and it was really tasty and simple to make just get a packet of chicken supreme sauce mix gently fry 1 onion with the quorn then make up the sauce using 1/2 pint of milk stir in add 6 chopped mushrooms bring to the boil then gently simmer for about 8 mins serve with seasonal vegetables i really recomend this dish

My favorite is:

2 italian zucchini
2 yellow squash
5 cloves garlic, thinly chopped
italian parsley
olive oil
angle hair pasta

Cut the veggies into thin slices.
Pour enough Olive Oil to coat a large skillet and heat to medium.
Place garlic and veggies in skillet and cook until tender.

While cooking, Boil pasta until done. Drain, but don't rinse.

Toss together with veggies and top with fresh parsley.

***Great with a ceasar salad!***

Whatever dish you are making, just substitute meat with Tofu, or potato.Meat inthe east is used only as flovouring. Try Vietnamese and Chinese cooking. Mexican food and Carribbean food is mostly without any heavy meats like pork or cattle.Chili without Carne ?

4 tomatoes-one bunch onion-two spoon tomato paste- two spoon olive oil-salt-black pepper-red pepper-5-6 leaves mint(washed and cutted)-two bunch crisp lettuce(washed and cutted tiny)-2 glass wheat(boiled)
now cut the tomatos and the onions very tiny Add tomato paste.put them into the pan cook them for5 or 6 minutes in the low heat.close the oven.then add the mint,crisp lettuce,wheat,red and green peppers,salt,olive oil.mix them.
spread the crisp letuce into the plate and put all the mixture in it.

Cheap and easy: use a can of pinto beans to make tacos instead of meat. Just add seasoning packet. I add four-cheese Mexican cheese blend and fresh tomatoes, lettuce and onions from my garden.
