Can't help you with the Chinese recipes, but here is a good stuffed mushroom recipes:
3 Italian hot sausages, casings removed
1 1/2 teaspoons dried oregano
1 cup freshly grated Parmesan cheese (about 3 ounces)
1/2 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1 8-ounce package cream cheese, room temperature
1 large egg yolk
Olive oil
24 large (about 2-inch-diameter) mushrooms, stemmed
1/3 cup dry white wine
Sauté sausage and oregano in heavy large skillet over medium-high heat until sausage is cooked through and brown, breaking into small pieces with back of fork, about 7 minutes. Using slotted spoon, transfer sausage mixture to large bowl and cool. Mix in 1/2 cup Parmesan cheese, Worcestershire sauce, and garlic powder, then cream cheese. Season filling with salt and pepper; mix in egg yolk.
Brush 15x10x2-inch glass baking dish with olive oil to coat. Brush cavity of each mushroom cap with white wine; fill with scant 1 tablespoon filling and sprinkle with some of remaining 1/2 cup Parmesan cheese. Arrange mushrooms, filling side up, in prepared dish. (Can be made 1 day ahead. Cover and chill.)
Preheat oven to 350°F. Bake uncovered until mushrooms are tender and filling is brown on top, about 25 minutes.

Stuffed Mushrooms

2 Tbsp butter
1/4 cup chopped green onion
1 cup heavy cream
2 1/2 cups seasoned breadcrumbs
1/2 lb Italian sausage,cooked,crumbled and drained
10 oz pkg frozen chopped spinach,thawed and drained
1/3 cup grated parmesan cheese
2-3 lb whole white mushrooms, stems removed
Melt butter in saucepan,add onion and saute until tender. Add cream and heat until almost boiling. Add breadcrumbs. Transfer to mixing bowl. Stir in remaining ingredients (except mushrooms) using hands to mix thoroughly. Stuff mixture into mushrooms. Place on baking sheet and bake at 400* for 10-15 minutes.
OR this is a recipe my friend gave me, quick and easy!
30 Whole white mushrooms
1 8 oz package of cream cheese softened
2 cloves garlic, chopped
1 tbl olive oil
shredded sharp chedder cheese or cheese blend
seasoned bread crumbs (optional)
pull stems off of mushrooms and chop
saute them in the olive oil with the garlic
let cool for a few minutes and mix with the cream cheese, add enough shredded cheese so that you can almost form balls of the mixture, drop spoon fulls of the mixture into the mushroom caps, sprinkle with bread crumbs if you like, bake in a shallow baking dish at 375 for about 10 minutes or until brown

Grind up some good ham. Chop a small onion, and mince some garlic. Mix it altogether with some grated chaddar cheese. Dip prepared mushrooms in liquid butter, stuff mushrooms with mixture and place in a baking pan. Once you have all mushrooms prepared, sprinkle some Parimesean cheese on each. Then bake at 375 til brown

if you go to www.tasteofhome.com and type in stuffed mushrooms,, you will get 291 recipes for it,,,, as for the other recipe,, i couldnt find it,, but they have alot of chinese chicken recipes,, hope that helps,,,,
