The best tomato soup is one that's made very simply. I peel and seed vine ripened tomatoes and chop them...not puree, because I like mine a little bit chunky.

Then in a good heavy pot, heat olive oil over a medium heat and add some thin garlic slices (or crushed garlic if you prefer) to flavour the oil. While the garlic is bubbling in the oil chiffonade some basil (to chiffonade, roll several leaves of basil up lengthwise and cut across to form very thin strips.

Pour your chopped tomatoes into the pot followed by the basil and heat only until it's hot and salt an pepper to taste...don't simmer it and serve right away with some croutons or french bread or, if you like, a bit of cream or a drizzle of good olive oil on the top.

This soup tastes so fresh that even people who don't like tomato soup will like it and there's no given recipe... anything you do works. If you like more garlic add more garlic, if you prefer it smoother, put the tomatoes in the blender, food processor or food mill before heating it.

Here is my favorite

Tomatoe Soup alla Vodka

2 tbsp virgin olive oil
4 large ripe tomatoes chopped
½ white onion chopped
salt and pepper to taste
1 tsp sugar
Basil flakes
½ cup dry red wine
¼ cup vodka
1 can of Tomatoe paste
500 ml Chicken broth/ready made or powder mixed with 500 ml boiling water
Soup thickener/white sauce thickener
1 cup of whipping cream or thick cream

Heat olive oil in a med sized pot, add tomatoes and onions, cook until tender.
Add salt and pepper, and basil to taste, add sugar and stir.
When mixture tends to start to dry out, add red wine, then vodka.
Add chicken broth all at once. Let mixture simmer for about 40 mins, for
tomatoes to be tender. Strain the soup over a sieve or a strainer into another med sized pot.
This might have to be done 2-3 times in order to get all the juice from the mixture.
Once completely strained, slowly add thickener to a desired consistency, the add
whipping cream. Makes approx 4 servings

Get some good tomatoes, garden grown preferably as the store tomatoes are green and put in argon gas to make them red.
Peel and stem them. Boil them in milk with a little butter and pepper. When they have boiled down and the soup is ready to be eaten, put in a little oregano and perhaps a dash of garlic.

melt the margarine in a saucepan and add some salt ,add grated tomatoes(2) in it after 5 minutes.add 5 glass of water. use some spices like pepper and garlic and leave it 15 minutes to boil. it's ready

buy a can with a red and white label. open can, empty into pot. fill can with water and add. this is really a special recipe i inherited from grandma
